Organic Whipped Cauliflower for Babies

Ingredients

Cauliflower or Broccoli, 1 large head
Unsalted butter, 2 Tbsp

Preparation

Trim cauliflower and cut into similar-sized florets. Put florets in a pot with cold water to cover. Put lid on pot, bring to a boil over medium-high heat, and boil just until cauliflower is tender, 15-18 minutes. Be careful not to overcook, or cauliflower will separate and fall apart. Drain.

While still hot, purée cauliflower with butter in a food processor until very smooth and creamy.

To store: Refrigerate cooled cauliflower purée in an airtight container for up to 3 days, or fill ice-cube trays or larger containers to freeze for up to three months.
