The freshly frozen strawberries filling “Mom” at Tiny Green Mom’s freezer just cannot wait to dive into another recipe! This light, refreshing strawberry granita is sure to cool anyone off on a hot summer day! Thanks whatscookingamerica.com!

Fresh Strawberry Granita

Ingredients

1 pound fresh strawberries, rinsed and hulled
3 tablespoons granulated sugar
1/2 cup water
1 teaspoon lemon juice, optional
Traditional aged Balsamic Vinegar, optional
Mint leaves, for garnish

Preparation

Wash, hull, and slice the strawberries. Place sliced strawberries in a large bowl. Toss the strawberries with the sugar; let stand for at least one hour at room temperature, or up to four hours. The strawberries will be very juicy. Puree the strawberries and their juices with the water in a blender. Taste and add fresh lemon juice, if desired. At this point, if you want, strain out any seeds.

Pour mixture into a 13×9-inch baking dish. Cover tightly with plastic wrap and freeze approximately 45 minutes or until icy at edge of pan.

Whisk to distribute frozen portions evenly. Cover and freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes.

Whisk to distribute frozen portions evenly. Cover and return to freezer and freeze about 3 hours or until frozen solid. Remove from freezer. Using a fork, scrape granita down length of pan, forming icy flakes. Return to freezer for at least 1 hour. Can be made 1 day ahead. When served, the granita should look like a fluffy pile of dry red crystals.

To serve, scoop flaked granita into tall goblets or parfait glasses. If the granita is too solid you can allow it to sit in the refrigerator for half an hour until you can scrape it with a fork. Garnish with mint leaves, and serve immediately with iced tea spoons.

For an extra-special taste sensation, drizzle the tops (use a dropper) of each serving of Strawberry Granita with aged balsamic vinegar.

Summertime invokes feelings of sun-drenched days and breezy nights…but for parents, this time of year can also usher in feelings of anxiety or dread as children head outside to play in the backyard or swim in the pool. Awareness, preparation, and vigilance are key in keeping children safe while enjoying themselves poolside this summer. From Sea Sun Solutions Pool Service comes these valuable safety tips to keep in mind as summer approaches.

Swimming Pool Safety Tips

Supervision

  1. Make sure you have a clear view of your entire pool while children are swimming. Remove anything that inhibits your view of the pool.
  2. Remove children from the pool if you must answer the telephone or use the restroom.
  3. Running around the pool and diving should be avoided at all times.
  4. Floaties and inflatable’s are not substitutes for supervision.
  5. No one should ever swim alone regardless of age.

Protective Barriers

  1. All pools should have a completely enclosed fence around the pool area to ward off neighborhood kids.
  2. Safety fences can be installed around the immediate pool perimeter while the pool is not in use.
  3. Electronic pool alarms can be installed around the pool to sound when someone walks by them.
  4. Place safety locks on all doors and slider doors at 5 feet or higher to ensure small children cannot open doors on their own.

Education

  1. All parents should know CPR and basic first aid if you have a pool.
  2. At the age of 4, have children enrolled in basic swimming lessons to ensure they can stay afloat on their own.
  3. Practice pool safety tips with your children and remind them that the pool is not a place to horse around.

A BIG thanks to Sea Sun Solutions Pool Service for providing these important pool safety tips!
