Mom” at Tiny Green Mom loves a good dip with warm tortilla chips! This Roasted Tomatilla Dip, a twist on the typical chips and salsa, found on Simple Daily Recipes, is ridiculously simple and can easily be doubled for an instant crowd-pleaser!

Roasted Tomatilla Dip

Ingredients

10 to 15 tomatilla

canola oil

salt & pepper

1 bunch of cilantro

4 green onions

1 garlic clove

fresh juice of 1/2 lime

Preparation

Preheat the oven to 400 F degrees.

Remove the husks from the tomatillas. In a large bowl, wash the tomatillas in warm water with a drop or two of dish soup until the sticky skin is not more. Rinse well.

Cut the tomatillas in half or quarters, whatever it takes to make them the same size. Place on a sheet pan, drizzle with enough oil to keep them from sticking, season with salt & pepper. Roast tomatillas for 10-15 minutes.

Meanwhile, grab a handful of cilantro, rinse and pat dry, then drop into a food processor or blender. Roughly chop the green onions and garlic clove, throw them into the processor and give them a few pulses until all is minced up.

When the tomatillas are out of the oven and slightly cooled, scrap them and their juices into the food processor or blender, add the juice of the lime. Pulse a few times until all is well mixed and slightly pureed.

Chocolate Fondue

Ingredients

12 ounces bittersweet or dark chocolate chips

3/4 cup water

1/4-1/2 teaspoon cayenne pepper, to taste

1 pinch sea salt

¼ cup flaxseed oil

1 teaspoon vanilla extract

3 tablespoons Grand Marnier (or fresh orange juice)

Seasonal fruit, cut into bite-size pieces, for dipping

Preparation

1. Place chocolate in a bowl set over hot (not boiling) water; stir until melted.

2. In a small pot, combine water, cayenne, and salt; bring water to a boil. Remove from heat and add to melted chocolate, 1 tablespoon at a time, whisking to incorporate. The mixture will seize up at first, but continue to whisk in tablespoons of hot water until all has been added. Whisk in oil, then vanilla and Grand Marnier. Pour hot mixture into a fondue pot and serve at once, with a platter of fruit and forks or skewers for dipping.

Hawaiian Fruit Salad

Ingredients

1 mango, peeled, seeded and cut into 1/4-inch strips
1 papaya, peeled, seeded and cut into 1/4-inch strips
1/2 cup raspberries
1/2 cup banana, sliced
3 golden kiwifruit, peeled and sliced
1/2 cup macadamia nuts, chopped
6 cups spring mix, loosely packed

For the vinaigrette:
1/2 cup pineapple juice
1/4 cup apple cider vinegar
1 shallot, minced
1 clove garlic, minced
1 1/2 cups canola oil
Salt and pepper, to taste

Preparation

1. For the vinaigrette—whisk together the pineapple juice, cider vinegar, garlic, shallot and salt and pepper.
2. Slowly incorporate the canola oil. Set dressing aside.
3. In a large salad bowl, toss together the mango, papaya, raspberries, banana and macadamia nuts with 1 cup of the vinaigrette.
4. Place the spring mix on a large serving tray and top with the mixed fruit.
5. Drizzle the salad with the extra dressing or serve on the side.
