It has been an exciting week filled with delicious recipes from SOS! The Six O’Clock Scramble by Aviva Goldfarb. The recipe below is light and refreshing after a day spent playing outdoors, and can be pre-made the day before should you wish to bring it to a summer BBQ or pack it into a cooler as you head to the beach!

Lemon-Basil Summer Pasta Salad

Ingredients

1 package (16 oz) farfalle pasta

6 plum tomatoes, seeded and diced

1 lemon, juice only

1/4 cup olive oil

1 teaspoon mashed garlic cloves (1-2 cloves)

3/4 – 1 teaspoon salt, to taste

8 oz. fresh mozzarella, diced

Preparation

In a large pot of salted water, cook the pasta according to package directions until it is al dente. Drain and rinse teh pasta with cold water to cool.

Meanwhile, in a large serving bowl, combine the remaining ingredients. Add the cooled pasta, toss, and chill for up to 24 hours, or serve it immeidately. Enjoy!
