Tiny Green Mom’s Two-Bean Salad

Ingredients

1 can organic black beans, rinsed and drained

1 can organic pinto beans, rinsed and drained (or red kidney beans – your choice!)

1 1/2 cups fresh corn kernels (approximately 3 ears of corn)

1/2 cup scallions, thinly sliced

1 1/2 cups chopped Roma tomatoes, seeded

1/3 fresh cilantro, minced

1/4 cup extra virgin olive oil

juice of 2 lemons

1 teaspoon salt, or to taste

Preparation

In large bowl, mix all ingredients. Chill 1-2 hours before serving. Enjoy!
