Lemon, garlic and fresh thyme tastes divine on this organic chicken dish from FATgirl Catering. What does FAT stand for? Flavorful, Addictive, and Tempting!

FATgirl’s Organic Lemon-Garlic Chicken

Ingredients

4 organic chicken breasts (skin on)

8 whole garlic cloves

2 organic lemons (sliced)

1 tablespoon fresh thyme (chopped)

4 oz. chicken stock (“Mom” prefers organic)

2 tablespoons olive oil

Kosher salt

Cracked black pepper

Preparation

Heat 1 tablespoon of the olive oil in a large sauté pan over medium flame. Add ½ a tablespoon of thyme and sauté for about a minute – remove and set aside.

Add chicken pieces to bowl, season with salt and pepper. Squeeze 3-4 of the lemon slices over the chicken – toss so that every piece gets some love. In a separate bowl toss the garlic cloves in the remaining olive oil, salt, pepper and love (another lemon slice). Set aside.

Add the chicken to sauté pan – skin side down (and get ready to drool at the smell alone). Let the chicken cook about 4 minutes – then turn. Squeeze 2 more lemon slices over the cooked side and add the garlic cloves. Cook for another 4 minutes. Add lemon slices directly to the pan – to absorb all the lemony-garlic love on the bottom of the pan – toss the garlic. Add the chicken stock and thyme, cover and reduce the heat to a simmer for 15-20 minutes.

To serve, place a chicken breast on plate top with lemon slice, garlic cloves and spoon some of the sauce over it.

Great accompaniment to a fresh organic mixed green salad and a glass of Chardonnay. Bon Appetit!
