Sunrise Pumpkin Cranberry Muffins

Ingredients

  • 1 box (5 1/2 c.) Nature’s Path Crunchy Maple Sunrise Cereal
  • 2/3 c. packed light brown sugar
  • 1/4 c. cornstarch
  • 2 tbs. tapioca flour
  • 2 1/4 tsp. GF baking powder
  • 1 1/4 tsp. xanthan gum
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. vegetable oil
  • 1/2 c. plus 2 tbs. low-fat buttermilk (shake well before measuring)
  • 2 large eggs or egg replacer
  • 1/2 cup dried cranberries
  • 1/2 cup raw pumpkin seeds

Preparation

  1. Set rack in middle and preheat oven to 400F. Line muffin cups with cupcake liners.
  2. Place cereal in bowl of food processor and grind to a medium-fine flour. Add sugar, cornstarch, tapioca flour, baking powder, xanthan gum, pumpkin pie spice, baking soda, and salt. Process to combine.
  3. In a 4-cup liquid measuring cup, whisk together oil, buttermilk, and eggs.
  4. With motor of processor running, pour egg mixture through feed tube into flour and process just until combined.
  5. Transfer batter to a bowl and stir in cranberries and 1/3 cup pumpkin seeds. Divide batter among 12 muffin cups. Sprinkle remaining pumpkin seeds on top. Round off tops by gently patting with moistened fingers.
  6. Bake until muffins spring back to a gentle touch and a cake tester inserted into center doesn’t feel sticky, 10 to 12 minutes.
  7. Immediately transfer muffins from pan to a cooling rack. Eat warm or at room temperature with a few hours, or freeze in an airtight container for up to 3 months.

Apple and Cheddar Grass-Fed Beef Burgers

Ingredients

3/4 pound 90% lean ground grass-fed beef
1/3 cup finely chopped red onion
2 ounces sharp cheddar, cut into 1/4-inch cubes
1 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup shredded peeled Granny Smith apple
Canola oil cooking spray (optional)

Preparation

Combine beef, onion, cheddar, mustard, salt, pepper and apple in a large bowl and form into four (4-inch) patties. Grill over medium heat or broil, flipping once, until done to your taste, 6 to 8 minutes. Or, spray a large skillet with cooking spray and cook over medium heat, 6 to 8 minutes.

Easy, breezy coleslaw – this lovely combination of tropical fruits mixed with Sun-Maid Raisins, carrots, cabbage, and bell peppers is so festive and ready in minutes!

Baja Coleslaw

Ingredients

1/2 small head cabbage, washed and finely shredded (about 4 cups)
2 small carrots, peeled and shredded
3 green onions, thinly sliced
1 small sweet bell pepper, diced 1/4″
3/4 cup Sun-Maid Natural Raisins or Sun-Maid Golden Raisins, divided
1/2 cup cubed fresh or frozen, thawed mango
1/2 cup cubed fresh or frozen, thawed papaya
1 tablespoon sugar
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
Chopped cilantro leaves for garnish

Preparation


COMBINE cabbage, carrots, onions, bell pepper, ½ cup of the raisins, mango and papaya in large bowl.
MIX sugar, olive oil and lime juice in small bowl. Add to vegetables and fruit and mix thoroughly.
TURN into a serving bowl and garnish with cilantro and remaining ¼ cup raisins.

Move over, Betty Crocker! There is a new boxed cake mix that is simply drool-worthy for your next big event (or midnight snack…)! “Mom” recently had the distinct pleasure of baking with all of Naturally Nora’s extraordinary cake and frosting mixes, much to her delight! If you are an avid label reader like “Mom,” you have probably been disheartened when seeking a tasty cake or brownie mix to make in a flash that didn’t have high frustose corn syrup or artificial flavoring hidden amongst the ingredients you could not pronounce. This same issue is what prompted Nora to create her own fabulous line of natural cake, brownie, and frosting mixes – all without artificial ingredients! Up to the taste test challenge, “Mom” baked Sunny Yellow cupcakes with Cheerful Chocolate Frosting. The instructions were easy to follow – all you need are 2 eggs, 1 1/4 cup milk (“Mom” used vanilla soymilk), and 2/3 cup oil. Mixed for 2 minutes with a hand blender, and then divided evenly up into two cupcake pans, for a total of 24, the cupcakes baked for exactly 25 minutes. They turned out light, fluffy, and just heavenly – no frosting was even needed for these sunny yellow surprises.

After the cupcakes cooled down, “Mom” made Cheerful Chocolate Frosting, which calls for real butter. The frosting spread on beautifully, and just as quickly as they were made, they were eaten! Hands down, best cupcake ever tasted!
