It’s grapefruit season in Florida, and what better way to showcase nature’s bounty than in this refreshing salsa!

Florida Grapefruit and Avocado Salsa

Ingredients

3 pink or ruby red Florida grapefruit

1/4 cup freshly squeezed lime juice

2 tablespoons brown sugar

2 tablespoons crystallized ginger, finely minced

1 small jalapeno pepper, seeded, finely diced

1/2 teaspoon kosher salt

1/4 cup red onion, diced

1 small cucumber, peeled, seeded, diced

1 medium ripe avocado, peeled, diced

2 tablespoons fresh mint leaves, very thinly sliced

Preparation

Peel grapefruit and section over a bowl to catch juices. Discard peel. Dice sections into half-inch pieces; set aside.

In a separate bowl, whisk lime juice, brown sugar, ginger, pepper and salt until sugar is dissolved; reserve.

Soak red onion in ice water to crisp. Add cucumber, avocado and mint to lime juice mixture; stir to combine. Drain red onion and add to the grapefruit. Add lime juice mixture to grapefruit; toss gently to combine. Cover and chill. Serve cold.

This salsa is great with whole grain tortilla chips or served over grilled fish or chicken.
