- Fresh lemon grass without leaves: 8 large stalks
- Water: 4 cups (250 ml each)
- Pure natural honey: 3 spoons or more according you your preference of sweetener
- Lemon juice: 2 tablespoon or more again as per your preference
First you need to cut the knob at the bottom off the stalk. The first layer of the stalk may have turned brown. You need to peel it off and clean it thoroughly in water. Now you need to split open the juicier part of the stalk. For that you can use a pestle or just the blunt side of the knife. Remember, it is the thickest side of the stalk and may take a lot of time for the process to complete. This will help the juice come out at the time of boiling.
Now put the stalk in water and boil it. As the water starts to boil, simmer the flame and leave it for 20 minutes. As the process reaches its conclusion the water will turn light yellow in colour. Let it cool down to room temperature before you add the honey to it. Now add the lemon juice and serve it with some ice cubes as it tastes great when chilled.
