Ingredients

1 10oz bag of Dandies Mini Marshmallows or Dandies Marshmallows
5 cups crisp rice cereal (“Mom” uses Nature’s Path Crispy Rice Cereal)
2 tablespoons Earth Balance Buttery Spread
2 tablespoons coconut oil

Frosting Ingredients

3 fresh strawberries, finely chopped (“Mom” prefers organic)
1/2 cup Earth Balance Buttery Spread
4 cups powdered sugar (“Mom” prefers organic)
1/2 teaspoon vanilla extract (“Mom” prefers Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract)

Preparation

For the Dandies Classic Crispy Treats
In a microwave safe bowl, combine Dandies, margarine, and coconut oil. In 30 second intervals, with a quick stir between each, microwave until marshmallows are fully melted. Mix in cereal and stir until evenly coated with marshmallow cream.

On a cookie sheet lined with parchment paper, evenly spread the rice crispy mixture using a spatula or hands. You want your treats to be about 1/2 inch thick. Let cool. Using a heart shaped cookie cutter, begin cutting out your treats.

For the Frosting
Using hand mixer or stand mixer, combine all ingredients and beat until you have fluffy frosting.

For the Assembly
Frost one crispy treat and make a sandwich by pressing another crispy treat on top. For garnish, you can roll the sides with colored sugar crystals or vegan sprinkles. It’s up to you on how adorable you want them to be. We used crushed pink and red jolly ranchers, because they look like rubies and gems. Have fun and don’t be afraid to get creative!

Whole-grain mustard and fresh herbs dress up ordinary hard-cooked eggs. Try topping them instead with a dusting of paprika or a dollop of wasabi paste. This recipe can easily be doubled or tripled to accomodate the number of guests, and it is dairy-free, nut-free and gluten-free.

Hard-Cooked Eggs with Mustard

Ingredients

4 large eggs (“Mom” prefers cage-free)
4 tsp. whole-grain mustard
Fresh flat-leaf parsley

Preparation

Place 4 large eggs in a saucepan, and cover with water by 1 inch. Bring to a boil, then immediately remove pan from heat, cover, and let stand 13 minutes. Use a slotted spoon to transfer eggs to an ice-water bath to stop the cooking. (Unpeeled eggs can be refrigerated up to 1 week.) Peel eggs and cut in half. Top each half with 1 teaspoon whole-grain mustard and a fresh flat-leaf parsley leaf.

Makes 4.

These habit-forming nibbles just might become your new Super Bowl party favorite! You can adapt the basic formula to suit your own taste preferences, swapping out the cayenne and cumin for ground dried chiles, pimentón, or za’atar.

Roasted Spiced Chickpeas

Ingredients

¼ cup extra-virgin olive oil
2 cans (15.5 ounces each) chickpeas, drained, rinsed, and patted dry (“Mom” prefers organic)
1 teaspoon cayenne pepper
1 tablespoon cumin seeds
Coarse salt

Preparation

1. Preheat oven to 450°F. Pour oil on a rimmed baking sheet, and heat in oven until hot, about 3 minutes.
2. Meanwhile, in a large bowl, toss to combine chickpeas, cayenne, and cumin. Season with salt.
3. Spread chickpea mixture in a single layer on hot baking sheet. Bake until chickpeas are crisp, stirring halfway through, 10 to 12 minutes. With a slotted spoon, transfer to paper towels to drain and cool slightly before serving.

Serves 6 to 8.

Spinach dip becomes healthier when you increase the fiber and protein content by adding white beans to the mix!

Warm Spinach – White Bean Dip

Ingredients

5 oz fresh baby spinach (3 cups)
1 cup fresh ricotta cheese
1 1/2 cups cooked cannellini beans
1 T. snipped fresh chives
1 1/2 teaspoons finely grated lemon zest
Salt and pepper, to taste

Preparation

Preheat oven to 350°F.

Place 5 ounces baby spinach (3 cups), rinsed and with water still clinging to leaves, in a large saucepan over medium heat. Cover and cook until wilted, stirring once, 4 to 6 minutes. Squeeze out excess liquid, then coarsely chop spinach.

Pulse 1 cup fresh ricotta and 1 1/2 cups cooked cannellini beans, drained and rinsed, in a food processor until smooth. Transfer to a bowl, and add 1 tablespoon snipped fresh chives and 11/2 teaspoons finely grated lemon zest. Season with coarse salt and freshly ground pepper. Stir in spinach.

Bake in a 1-quart baking dish until bubbling, about 30 minutes. Season with pepper. Serve warm with crudités.

Makes 3 cups.

Planning for your Super Bowl party? Kick things up a notch with this Mango Guacamole recipe created by leader in Hispanic and ethnic cookware, IMUSA! It is delicious and savory, combining avocadoes with cilantro and radishes for a dcidedly different spin on this traditional dish.

Mango Guacamole

Ingredients

3 ripened avocados
1 ripened mango
¼ cup lime juice
½ cup cilantro
½ cup white onion
3 teaspoons salt

Preparation

In your IMUSA Molcajete, add half of the diced mangos and mash with the pestle into a pulp. Then add one avocado and mash into a pulp with the mango. In a separate bowl mix remaining ingredients, including mango, and add more lime juice if needed. Fold mixture with pulp inside Molcajete and serve with tortilla chips. Enjoy!

As cold weather sets in across most of the country, it’s the perfect time to savor a hot mug of “Smart & Spicy,” featuring Älsa Energy’s Three-Citrus mix. Developed by Älsa’s master mixologist, Ricky McCreadie, it’s perfect for breakfast or early afternoon.

Smart & Spicy Drink

Ingredients

8 oz. hot water
1 packet of Three Citrus Älsa
1 teabag of caffeine-free chai (We recommend Bengal Spice from Celestial Seasonings)
1 t. organic honey
Ground nutmeg
Ground cinnamon

Preparation

Steep tea bag in fresh hot water for 4-6 minutes, then remove bag. Add one packet of Three Citrus Älsa and stir until dissolved. Gently stir in honey. Top with a dash of nutmeg and cinnamon and enjoy!

Serve this flavorful chicken on Super Bowl Sunday that has been marinated in rich chestnut honey and a variety of spices!

Marinated Chicken

Ingredients

1.3 lbs chicken breasts or boneless thighs (“Mom” prefers free-range, organic chicken)
3 tbsp chestnut honey
1 tsp curry
1 tsp cumin
1 tsp mustard
Pepper
1 lemon
Extra virgin olive oil
Salt

Preparation

Reduce heat and finish cooking the meat salting lightly.

Place the cumin in a frying pan and toast in order to release the essential oils. Press lightly and place it in a bowl.

Add the curry powder, lemon juice, honey, mustard and create a marinade. Add the chicken (chopped to your liking) and let it rest for at least 20 minutes.

Preheat the griddle. Once hot, drain the chicken cuts and cook.

Lower the heat and finish cooking. Lightly salt the meat.

Adjust salt and serve.

Serves 4.
