Ingredients

1 Pack of neat Original Mix
1 egg or neat egg substitute
¼ cup water
½ cup diced vegetables

Preparation

Combine all ingredients & mix well. Form mixture into four patties. Brown for 3 ½ minutes on each side in a non-stick skillet over medium heat. Place on a toasted bun; top with desired condiments. “Mom” loves fresh slices of tomato and avocado on top, or guacamole & swiss cheese! Enjoy!

Flip out – it’s National Pancake Day! For breakfast, or really anytime, indulge in fluffy Banana Pancakes featuring Just Spices Pancake Blend. Enjoy one, maybe two, even 10 pancakes!

Just Spices Banana Pancakes

Ingredients (makes 8 small pancakes)

· 1 medium ripe banana
· 2 large eggs
· 1 teaspoon Pancake Blend
· Butter or oil
· 1/8 teaspoon baking powder, for fluffier pancakes
· Optional: 1 cup fresh fruits (we recommend blueberries or chopped apples), 1/2 cup chopped nuts and 1 tablespoon honey

Preparation

1. Peel the banana and break it up into several big chunks in a bowl.
2. Use a dinner fork to thoroughly mash the banana. Continue mashing until the banana has a pudding-like consistency and no large lumps remain (a few small lumps are okay). You should have 1/3 to 1/2 cup of mashed bananas.
3. Whisk in Just Spices Pancake blend. These pancakes are pretty great on their own, but a few extras never hurt. Add 1/8 teaspoon of baking powder for fluffier, lighter pancakes and save any chunky, heavy ingredients — like nuts — for when the pancakes are on the griddle.
4. Whisk the eggs together until the yolks and whites are completely combined. Then pour the eggs over the banana mixture and stir until everything is completely combined.
5. Melt a little butter or warm a little vegetable oil in the pan to prevent the pancakes from sticking to the griddle, if you like.
6. Drop 2 tablespoons of batter onto the hot griddle. It should sizzle immediately — if not, turn up the heat slightly.
7. Cook the pancakes until the bottoms look browned and golden when you lift a corner (roughly 1 minute). The edges should also be starting to look set, but the middle will still be loose like barely set Jell-O.
8. Cook the other side for another minute or so, until it’s is also golden-brown. You can flip the pancakes a few times if you need to in order to get them evenly browned (Flipping is much easier once the second side is set!).

Super Bowl Sunday is upon us! Whip up this nutritious and super simple black bean salsa that will have your guests cheering, no matter what team they are rooting for today!

If you watch ESPN regularly, then you know Mark Schlereth. Mark’s both a talented radio and TV sportscaster. And certainly it goes without saying, with an NFL career like his, he was a pretty good football player, too. During his 12 years in the NFL, he played in two Pro Bowls and won three Super Bowls — one with the Washington Redskins and two with the Denver Broncos.

This is Mark’s black bean salsa recipe, which he recommends you serve with his Green Chile Eggs Benedict.

Black Bean Salsa

Ingredients

1 (14-ounce) can black beans, rinsed and drained (“Mom” prefers organic)
1 cup Homemade Salsa (see below)
1⁄4 cup chopped fresh cilantro
Juice and zest of 1 lime
Sea salt and freshly ground black pepper

Preparation

Combine the black beans, salsa, cilantro, and lime juice, and zest ingredients in a bowl. Season with the salt and pepper, and stir well.

Makes about 3 cups.

Kefir - Basil Pesto Hummus

Ingredients

¼ cup Lifeway Plain Whole Milk Kefir
2½ cups cooked chickpeas (drained and rinsed, if canned)
2 Tbsp tahini (sesame seed paste)
¼ cup pickled banana peppers
½ tsp garlic powder
2-3 Tbsp basil pesto to taste
½ a lemon, squeezed
Salt and pepper to taste

Preparation

Combine all ingredients into a food processor and blend until creamy. Serve with warm pita bread, crudités or crackers. This hummus also makes a great sandwich spread!

These Brazi Bites Spooky Witch “fingers” are fun and easy to make so even the kids can get involved in the kitchen. Served with marinara sauce “blood” for dipping, this dish is a spook-tastic treat for your entire family!

Brazi Bites Spooky Witch Fingers

Ingredients

For the fingers:
20 ea. Brazi Bites, defrosted
2 eggs, beaten well with 1 tsp. Water
Almond slices
Vegetable oil or vegetable spray

For the marinara sauce:
1 – 28 oz. can crushed tomatoes
1 c. Water (swished from the tomato can)
1/4 c. Olive oil
8 garlic cloves, sliced
1 tsp. Red pepper flakes
1 tsp. Kosher salt
1 tsp. Dried oregano

Preparation

For the Marinara: Heat oil over medium heat. Add garlic cloves and cook for 30 seconds until beginning to sizzle. Add tomatoes and 1 c. Water. Add Red pepper flakes, salt and dried oregano. Bring marinara to a simmer and cook for 15 minutes until thickened. Serve with Brazi bites fingers.

For the Brazi Bites fingers: Preheat oven to 400 F. Coat hands well with oil. Knead Brazi Bite (1 ea.) well and roll into a 5 in. ‘stick.’ Using a small knife, cut 3 slits along the top, middle and bottom of the finger. Place an almond slice into the top of the “finger.’ Place onto a sheet pan coated with pan spray. Brush fingers with egg wash. Bake in oven for 18-22 minutes until golden brown. Brush the “nail” of the finger with marinara sauce.

Ingredients

8 ounce coconut or almond milk (“Mom” prefers Orgain Organic Protein Almond Milk)
1 scoop Berry Warrior Blend
½ cup diced cantaloupe
½ cup diced watermelon
1 to 2 teaspoons lime juice
Few mint leaves
Handful ice

Preparation
