Jennifer Fosberry first visited the Statue of Liberty as a child with her Girl Scout troop and climbed to the top of El Castillo on her honeymoon. These muffins can also be made using other fruits or berries in season, so “Mom” used raspberries. They were fluffy and delicious, and tasted best warm, right from the oven!

Abby Cadabby’s Disappearing Strawberry Muffins

Ingredients

1 cup all-purpose flour (“Mom” used organic unbleached white flour)

1/2 cup whole-wheat flour

1/3 cup sugar

1/4 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup low-fat plain yogurt

1/3 cup olive oil (“Mom” used organic canola oil)

1 large egg

2 cups strawberries, hulled & chopped

Preparation

Preheat the oven to 400 degrees F.

Line 12 muffin cups with paper liners, or lightly grease each cup.

In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, sugar, cornmeal, baking powder, baking soda, and salt; set aside.

In a large bowl, use a rubber spatula to stir together the yogurt and oil, then stir in the egg until well-blended. Stir in the flour mixture just until mixed. Fold in the strawberries.

Fill the muffin cups two-thirds of the way full.

Bake for 20 to 25 minutes or until a toothpick inserted in the center of one muffin comes out clean. Transfer to rack to cool for a minute or two. Turn muffins out to cool further.
