Falling For All Things Pumpkin

I went outside this morning and guess what? There is actually a (slight) coolness in the air here in FL! I am hopeful it is the start of Fall! But even if the weather doesn’t cooperate with my vision of cooler mornings & evenings or an end to the humidity… I’ve got my mind on all things pumpkin! Halloween is just around the corner, everywhere you look you see pumpkin spice…it’s time!

To celebrate the changing of the seasons and yes, all things pumpkin, I have included a few of my favorites to enjoy this time of year!

Barbara’s Pumpkin Puffins

Now that Fall is here, Barbara’s has debuted their Limited Edition Pumpkin Puffins! A combination of real pumpkin, corn, and whole grain oats and rice makes these crunchy pillows absolutely irresistible. The smell of fresh, baking bread in the comfort of your own kitchen is a scent like no other! Warm, inviting and delicious, this gluten free, vegan sandwich bread made using Blends by Orly is a true treat! It can be enjoyed immediately or frozen to save for a later date.

Orly’s Gluten Free Vegan Healthy Seeded Sandwich Bread

Ingredients

2 tsp (7 grams) or 1 packet of instant yeast
1 cup (230 ml) lukewarm water
2 1/2 cups (300) grams Blends by Orly Tuscany Blend
1/4 cup (50 grams) vegetable oil
1 1/2 Tablespoons (34 grams) honey
1/4 cup (20 grams) chia seeds (“Mom” prefers Carrington Farms)
1/4 cup (20 grams) flax seeds (“Mom” prefers Carrington Farms)
1 1/2 tsp salt
1 tsp baking powder
2 Tablespoons pumpkin seeds (optional garnish; “Mom” uses SuperSeedz)

Preparation

Mix: In the bowl of you stand mixer with a paddle attachment or in a bread machine, combine all the ingredients, and mix together to make a soft, smooth, slightly sticky dough.

Proof: Place the dough in a lightly greased bowl, cover the bowl, and allow it to rise in a warm temperate (approximately 90 degrees F) untill it’s almost doubled in size, about 30-45 minutes.

Lightly grease a 9″ x 5″ loaf pan. Flour your work surface and the surface of your dough with Tuscany Blend or white rice flour. Gently shape the dough into a smooth log, and place it into the pan, smooth side up.

Cover the pan with lightly greased plastic wrap or with a warm towel, and allow the loaf to rise till it’s raised over the rim of the pan by about 3/4″, about 45 minutes. For a faster proof time, let your loaf sit in an oven set to a warming temperature of about 90-100 degrees F for about 30 minutes.

Bake: Towards the end of the rising time, preheat the oven to 350°F. If you don’t mind that the bread is not vegan, adding an outer coat of egg-wash will give your bread a glossy and crusty finish. Otherwise, brush the top of the dough with water-wash and sprinkle it with pumpkin seeds. Bake the bread for 30 to 35 minutes, or until the tops are a golden color and makes a hollow sound to the touch. Remove the loaf from the oven, and turn it out of the pan onto a rack to cool. Slice the bread in advance and freeze for up to 9 months. Makes 1 loaf.

This deliciously simple recipe for Superfood Pesto is a staple in “Mom’s” house! It can be made ahead and stored for use, or eaten immediately – we love it served over pasta or salmon, as well as swirled into soups or spread on fresh bread! “Mom” started adding in flax and chia seeds as a great way to sneak in some extra nutrition unnoticed by her little ones – Carrington Farms has made it even easier to add in with their convenient Flax Chia PAKS.

Superfood Pesto

Tiny Green Mom’s Superfood Pesto

Ingredients

2 cups fresh organic basil leaves (“Mom” prefers Trader Joe’s Organic Basil)
1/4 cup pine nuts
2 fresh garlic cloves
2/3 cup organic extra virgin olive oil (divided – see below)
Salt and freshly ground black pepper, to taste
1/2 cup freshly grated Parmesan cheese, preferably organic
1 package Carrington Farms Flax Chia PAKS

Preparation

Combine the organic basil, pine nuts, fresh garlic and parmesan cheese in a blender or small food processor. Pulse until the ingredients are coarsely chopped. Add 1/2 cup of the oil and process the mixture until fully incorporated and smooth. Season with the salt and freshly ground pepper, to taste.

If you plan to serve the pesto immediately, add in all the remaining oil, incorporating until smooth.

If you plan to store the pesto, place the remaining extra virgin olive oil over the top of the pesto in the container. “Mom” prefers to place a layer of Press’n Seal over the top of the pesto, and then placing the lid of the container on top to help keep it fresh.

Carrington Farms Flax Seed Cookies

Ingredients

1-cup oatmeal blended until flour-like
¼-cup flax seeds blended until flour-like
1 can cannellini beans drained and blended till smooth
½-cup oatmeal
¼ cup Carrington Farms Flax Seeds
½ cup or so of raisins
½-cup applesauce

Preparation

Preheat oven to 350 F.

Add dry ingredients together in separate bowl. Set aside. Place the rest of the ingrdients together and stir to combine. Add wet ingredients to dry ingredients, and make a wet type texture not too dry, but not soupy. Place on cookie sheet in small teaspoonfuls.

Baking time varies on the wetness… keep testing them and don’t overcook… they don’t raise much!

Optional Additions

¼ cup pure maple syrup or if watching sugar you can use agave syrup or pure raw sugar.. or none of these.. up to your taste
Can add chips, nuts, or sesame seeds…
¼-cup millet
¼ cup amaranth grain
Bran buds can be added… lots of fiber
Grape nuts can be added
