Mom” is joining the Gardein™ Party and taking the Meatless Monday challenge, which has been a ton of fun! Finding a solution to “what’s for dinner” has never been easier, thanks to the many options offered by Gardein™ (garden + protein)! Try this flavor-filled wrap that made its’ debut over the weekend in “Mom’s” kitchen, and make this your “Meatless Monday!”

Chipotle Lime Wrap

Ingredients

1 pkg gardein chipotle lime crispy fingers
1/2 cup mayonnaise (vegan options available)
1 tbsp lime juice
1/4 tsp salt
1/4 tsp pepper
2 tbsp cilantro
3 tortillas (“Mom” used whole wheat)
2 cups romaine, thinly sliced
1 cup cabbage, thinly sliced
1/4 cup cilantro, chopped
1 avocado, diced
1 tomato, sliced
1 lime, wedges

Preparation

Cook chipotle lime crispy fingers according to cooking instructions on package.

for the lime aioli…

Place mayonnaise, lime juice, salt, pepper and cilantro in food processor and pulse until combined.

for the wrap…

In a non stick fry pan over medium heat cook tortilla for 30-45 seconds on each side until just hot.

Lay hot tortilla on cutting board, top with romaine, cabbage, cilantro, avocado, tomato and hot crispy chipotle lime fingers and roll.

serve with lime wedges and lime aioli.

Spicy Beefless Skewers

Ingredients

1 pkg gardein beefless tips
8 wooden skewers
1/2 cup fresh cilantro, chopped
4 garlic cloves thinly sliced
3 tbsp low sodium soy sauce
1 tsp orange zest, grated
1 tsp sriracha
1/4 tsp miso paste
1 tbs brown sugar
1 ct red pepper, cored, seeded and cut into 1.5” pieces
1 ct yellow pepper, cored, seeded, cut into 1.5” pieces
1 ct green pepper, cored, seeded, cut into 1.5” pieces
1/2 cup mayonnaise (vegan options available)
1 tbsp fresh lime juice
1 tsp soy sauce
1/4 tsp miso paste

Preparation

Soak skewers and thaw beefless tips for 15 minutes.

Puree cilantro, garlic, soy sauce, orange zest, sriracha, miso paste and sugar in a food processor and set aside.

For the dipping sauce….

Combine mayonnaise, lime juice, soy sauce and miso paste in a bowl and mix well.

For the Kebabs….

Thread beefless tips and peppers on each skewer, alternating.

Coat grill rack with oil, heat grill to medium high heat and cook skewers until the peppers and tips are caramelized and hot, while brushing both with cilantro soy sauce, approximately 5-7 minutes.

Serve with dipping sauce.
