This scrumptious salad is essentially made of “superfoods” – lentils, beets, and tomatoes. Green lentils are unique in flavor, a good source of iron, and an essential source of proteins for vegetarians. You can find green lentils in bulk in health stores and of course at Trader Joe’s, where they are available steamed and ready to eat. Pour the vinaigrette on top of the lentils when they are still warm so that they will soak its flavor. This salad is best when made the day before.

Lentil & Beet Salad

Ingredients

½ (17.6-oz) pkg refrigerated Steamed Lentils

3 pearl tomatoes, cut in wedges

1/2 (8-oz) pkg refrigerated Steamed and Peeled Baby Beets, thinly sliced

3 oz goat cheesel og, crumbled

Salt and pepper, to taste

Chives and fresh thyme for garnish
Vinaigrette

2 Tbsp olive or vegetable oil

1 Tbsp red wine vinegar

1 tsp Dijon mustard

½ shallot, minced

Preparation

1. Place lentils in a medium bowl and heat in microwave for 3 minutes. Stir in tomato and beets.

2. Whisk vinaigrette ingredients.

3. Pour vinaigrette over lentil mixture, stir to combine, then sprinkle with goatcheese crumbles. Taste and adjust seasonings. Garnish with chives and thyme.

Makes 2 servings.
