Shi’s Superfood Scramble

Ingredients

4 egg whites, beaten

1 cup spinach leaves

1/2 cup broccoli florets

1/2 cup zucchini, diced

1/4 cup finely diced red bell peppers

Preparation

Lightly saute veggies with Pam non-fat cooking spray just as veggies become tender, use one more spray of Pam and fold in the beaten egg whites, cook just till eggs are set and ENJOY!

Serve with dry sourdough toast and a fresh fruit cup.
