February 27th is National Strawberry Day and what better way to enjoy this delicious berry than having it covered in chocolate!

Pistachio Chewy Bite Chocolate Dipped Strawberries

Ingredients

4 Setton Farms Pistachio Chewy Bites
12-14 fresh strawberries, washed and dried
1 cup dark chocolate chips
2 teaspoons cocoa powder
2 teaspoons refined coconut oil
Dash sea salt
1/4 teaspoon ground cinnamon

Preparation

Finely chop Setton Farms Pistachio Chewy Bites and set aside.

In a double boiler add chocolate chips over medium heat. Or fill a 2 quart pot with 1 inch water, covered with a heat-proof bowl. Place chips in bowl and allow chocolate to melt, about 5 minutes.

Whisk in cocoa powder, coconut oil, sea salt, and cinnamon. Smooth with a spatula until uniform and lower heat to a simmer.

Dip strawberries into chocolate mixture and transfer to a baking sheet, lined with parchment or wax paper. Sprinkle generously with chopped Setton Farms Pistachio Chewy Bites.

Let cool for about 10 minutes, and then transfer to refrigerator for about 1 hour to overnight to set up before serving.

Serves 4-6.

The holidays may be over, but if you have leftover bags of dried cranberries in yoir pantry, whip up this delightful rice pudding made with almond milk for a yummy dessert!

Rich Pistachio and Dried Cranberry Rice Pudding

Ingredients

3/4 cup short grain organic arborio rice
3 cups organic un-sweetened almond milk
1/3 cup organic evaporated cane sugar
Dash sea salt
1/2 vanilla bean, split lengthwise
2 cinnamon sticks
2 slices (1 inch thick) lemon peel
*1/4 cup dried cranberries
*1/3 cup Setton Farms Pistachio Kernels, roughly chopped

Preparation

To a 4-quart pot and add rice, almond milk, sugar and sea salt. Stir gently. Cover and cook about 5 minutes, or until at a simmer. Add vanilla bean, cinnamon sticks, and lemon peel to rice. Stir once more and then partially cover. Cook at a simmer over low heat until rice is tender and liquid is almost absorbed, stirring occasionally, about 18 minutes.

Stir in dried cranberries and Setton Farms Pistachio kernels or the Pistachio Chewy Bites. Serve warm or chilled.

Serves 4-6.

So whip up some holiday cheer and fill your house with the sweet scent of a new twist to an old favorite.

Pistachio Chewy Bite Bread Pudding

Ingredients

2 cups unsweetened almond milk (“Mom” uses Orgain’s Organic Almond Protein Milk)
1/3 cup organic dark brown sugar
2 tablespoons ground flax seeds
2 tablespoons arrowroot powder
2 tablespoons whole wheat pastry flour
2 teaspoons vanilla extract
Zest of 1 lemon
1/4 teaspoon sea salt
2 tablespoons non-hydrogenated buttery spread
6 slices whole wheat or organic white bread
4-5 Setton Farms Pistachio Chewy Bites, roughly chopped
1/4 cup pistachio kernels, finely chopped or pulsed until fine

Prearation

Pre-heat oven to 350°.

Add almond milk to a bowl. Add sugar, flax seeds, arrowroot powder, flour, vanilla extract, lemon zest, and sea salt. Whisk until slightly frothy. Set aside.

Spread each slice of bread with a small amount of buttery spread and slice each piece into 6 small triangles. Place in a greased 8 x 8 baking dish, crowded together. Pour liquid mixture over bread and gently press with a fork to help bread absorb liquid.

Gently fold in chopped Setton Farms Pistachio Chewy Bites. Top dish with pistachios.

Bake about 38-40 minutes, or until pudding is set and top is lightly browned.

Yields 6-8 servings

Witch Hand 2Here’s a scarily healthy treat on Halloween! Fun to put together and almost too spooky to eat, these Pistachio Chewy Bite Witches’ Fingers are made with nutritious ingredients, such as pistachio kernels, almond milk and dried cranberries!

Pistachio Chewy Bite Witches’ Fingers

Ingredients

6 Setton Farms Pistachio Chewy Bites
1/4 cup almond milk
1/2 cup non-dairy dark chocolate chips
Dash sea salt
12 dried cranberries
1/2 cup Setton Farms Roasted Pistachio Kernels, finely ground

Preparation 

Unwrap all chewy bites and cut each chewy bite in half lengthwise. Gently press the two halves together, with the stickiest sides facing each other, creating one long strip. If desired, to create thumb and pinky finger, leave two halves short. Set aside.

Place chocolate chips in a heat-proof bowl.

In a small pan, bring almond milk to a boil. Pour over chocolate chips and let sit for about 20 seconds to melt chocolate. Add sea salt. Whisk until smooth.

Dip long Pistachio Chewy Bite strips into chocolate mixture and then sprinkle or roll in pistachios immediately. Place on wax paper lined plate and top each strip with 2 overlapping dried cranberries at the tip. Set aside for about 20 minutes to firm up.

Yields 6.
