This simple, nourishing stew, githeri, originated with the Kikuyu tribe in Kenya. Today it is eaten throughout the country as a staple dish. “Mom” is loving that there are only 7 ingredients, and most are always on hand in the pantry! This recipe was inspired by Whole Planet Foundation® microcredit client recipes.

Kenyan Corn and Bean Stew

Ingredients

1 cup dried kidney beans, soaked overnight, or 2 1/2 cups cooked kidney beans
1 tablespoon expeller-pressed canola oil
1 yellow onion, chopped
3 tablespoons tomato paste
3 cups corn kernels, fresh (from 4 ears) or frozen
2 potatoes, cut into 1/2-inch cubes
3/4 teaspoon fine sea salt

Preparation

If using dried beans, drain and place in a medium saucepot. Cover by 2 inches of water and bring to a boil. Reduce heat to a simmer and cook about 1 hour or until tender. Drain.

In a large high-sided skillet or saucepot, heat oil over medium heat. Add onion and cook 10 minutes or until tender and golden, stirring occasionally. Stir in tomato paste and cook 1 minute, stirring. Add cooked beans, corn, potatoes, 4 cups water and salt and bring to a boil. Reduce heat to medium and simmer 25 minutes or until potatoes are tender and most liquid has been absorbed, stirring occasionally.

Winter weather calls for warm, comforting soup, and this rich, hearty soup is just the thing to make!

 

Hearty Greens Soup with Bowtie Pasta and Tomatoes

Ingredients

2 tablespoons olive oil
3 cloves garlic, chopped
1 medium yellow onion, chopped
1 bay leaf
Salt and pepper to taste
4 plum tomatoes, cored and chopped
2 carrots, chopped
8 cups water
1 bunch Swiss chard (about 3/4 pound), roughly chopped
1/2 bunch escarole (about 1/2 pound), stemmed and roughly chopped
1/2 pound dried bowtie (farfalle) pasta
1 (3-inch) Parmigiano Reggiano rind, plus grated Parmigiano Reggiano for garnish
1/4 pound baby spinach

Preparation

Heat oil in a large pot over medium heat. Add garlic, onions, bay leaf, salt and pepper and cook, stirring often, until caramelized, about 15 minutes. Add tomatoes and cook until most of the liquid is released and absorbed, about 5 minutes more. Add carrots and water and bring to a boil, scraping up any browned bits from the bottom of the pot.

Stir in Swiss chard, escarole, pasta and Parmigiano Reggiano rind, reduce heat, cover and simmer until broth is flavorful and greens and pasta are tender, about 15 minutes. Stir in spinach and season with salt and pepper.

Remove and discard bay leaf and rind from soup then ladle into bowls, garnish with grated cheese and serve.

Besides adding a sweet nutty flavor to dishes, pumpkin is a ready source of vitamin A, which boosts the nutrition content of this offbeat chili. Garnish each portion with a dollop of sour cream and chopped cilantro.

Turkey Pumpkin Chili

Ingredients

2 tablespoons extra-virgin olive oil
1 small yellow onion, chopped, chopped
1 green bell pepper, cored, seeded and chopped
2 jalapeños, seeded and finely chopped
2 cloves garlic, finely chopped
1 pound ground white or dark meat turkey
1 can diced tomatoes, with their liquid
1 can pumpkin purée
1 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
Ground black pepper, to taste
1 can kidney beans, rinsed and drained

Preparation

Heat oil in a large pot over medium high heat. Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently, until tender, about 5 minutes. Add turkey and cook until browned. Add tomatoes, pumpkin, water, chili powder, cumin, salt and pepper and bring to a boil. Reduce heat to medium low and add beans. Cover and simmer, stirring occasionally, for 30 minutes more. Ladle chili into bowls and serve.

Cut these chewy marshmallow and corn flake cookies into other Halloween shapes, too. Be sure to enjoy the cookie trimmings as a treat!

No Bake Halloween Cookies

Ingredients

4 tablespoons butter, plus more for the pan and cookie cutter
5 1/2 cups mini marshmallows
1 teaspoon ground cinnamon
8 cups 365 Everyday Value Organic Corn Flakes
6 pretzels
1/4 cup 365 Everyday Value Dark Chocolate Mini Chunks
1/4 cup raisins or dried currants

Preparation

Lightly butter a 9×13-inch baking pan. In a medium pot, heat marshmallows, butter and cinnamon over medium-low heat, stirring often, until smooth, 3 to 4 minutes. Transfer to a large bowl with corn flakes and quickly and gently toss to coat (try not to crush too many of the flakes). Transfer to pan, spreading it out evenly and pressing down firmly. Set aside in a cool spot for 30 minutes.

Use a buttered, (3-inch) round cookie cutter to cut out cookies and transfer to a large plate. Break pretzels into pieces and firmly insert a curved piece into the top of each cookie to form a stem. Use chocolate and fruit to decorate cookies like jack-o-lanterns.

Little ones will enjoy this hearty carrot cake for breakfast, a snack or dessert. Serve it warm or at room temperature.

Carrot Oat Cake

Ingredients

Natural cooking spray oil
1 cup rolled or quick cooking oats
1 cup chopped walnuts
1 cup whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 cups grated carrots
1 cup pure maple syrup
1 cup dried currants
1/2 cup unsweetened finely shredded coconut
1 1/2 teaspoon pure vanilla extract

Preparation

Preheat oven to 325°F. Lightly oil a (9-inch) square baking pan and set it aside.

Pulse oats and walnuts in a food processor until coarsely ground. Transfer to a large bowl. Add flour, baking powder, baking soda, cinnamon, ginger and salt and mix well. In a second large bowl, combine carrots, maple syrup, currants, coconut and vanilla. Add carrot mixture to flour mixture and stir until completely incorporated. Transfer to prepared pan and bake until cooked through and deep golden brown, about 1 hour. Set aside to let cool before cutting into squares.

Crisp beans and a savory dip of puréed carrots make a great finger-food starter or an excellent addition to a picnic.

Steamed Green Beans with Carrot-Dill Dip

Ingredients

3 medium carrots, peeled and thinly sliced
1 pound green beans or yellow wax beans or a mixture of both, stem ends trimmed
2/3 cup lowfat sour cream
1/3 cup light mayonnaise
1/2 shallot, roughly chopped
1/2 teaspoon fine sea salt
pinch cayenne pepper
1/4 cup lightly packed chopped fresh dill

Preparation

Steam carrots until they are very tender, about 10 minutes. Transfer carrots to the bowl of a food processor. Set aside to cool.

Steam green beans until bright green and crisp-tender, 4 to 5 minutes. Immediately cool beans in cold water. Drain and pat dry.

When carrots are cool, add sour cream, mayonnaise, shallot, salt and cayenne to the food processor and process until smooth. Add dill and pulse until combined. Transfer dip to a bowl and serve with green beans for dipping.

Rich salmon, slightly sweet honey mustard and crunchy vegetables make this fresh take more flavorful than tuna salad. Kids and adults alike will enjoy it on stoneground crackers, multigrain sandwich bread or lettuce leaves.

Honey Mustard Salmon Salad

Ingredients

2 tablespoons 365 Everyday Value® Organic Honey Mustard
2 tablespoons plain nonfat yogurt
1 (6-oz) can 365 Everyday Value® Wild Alaskan Pink Salmon, drained
1 red bell pepper, chopped
1 rib celery, thinly sliced
1/4 cup finely chopped red onion

Preparation

In a large bowl, whisk together honey mustard and yogurt. Add salmon, pepper, celery and red onion and stir gently until combined.

Sweet and fruity hand pies are dusted with cookie crumbs! Use premade pie crust dough or make Whole Foods’ easy Classic Pie Crust. If you don’t have a 5-inch cookie cutter, use a small bowl or make smaller pies.

Summer Fruit Hand Pies

Ingredients

3 cups chopped summer fruit, such as peeled and pitted peaches or nectarines, strawberries or pitted cherries
5 tablespoons sugar
1 1/2 tablespoons 365 Everyday Value All-Purpose Baking Flour, plus more for dusting
2 tablespoons heavy cream
1/4 cup crushed 365 Everyday Value Organic Vanilla Wafers or Ginger Snaps
2 recipes prepared pie crust (or two rolled out 9-inch crusts)

Preparation

Preheat oven to 375°F. On a floured surface, roll out dough until about 1/8-in thick. Cut into twelve (5-inch) circles, rerolling dough as needed. In a medium bowl, toss together fruit, sugar and flour. (Do this just before filling the pies; if done too far in advance, the mixture can get too juicy. Use less or more sugar, as desired, depending on fruit’s natural sweetness.)

Working one at a time, spoon some filling into the center of a circle of dough; brush edges with water. Fold over into a half moon and crimp edges to seal. Brush top with heavy cream, sprinkle with cookie crumbs and bake on a large, parchment-paper-lined baking sheet until golden brown, about 35 minutes.
