Who knew there were so many ways to enjoy a strawberry!? Here’s another fantastically fresh recipe from Cooking Light Magazine, starring, you guessed it – the ripe, juicy strawberry!

Strawberry, Pistachio, and Goat Cheese Pizza


1 (12-ounce) prebaked pizza crust (such as Mama Mary’s) or fresh pizza dough

1/3 cup (3 ounces) crumbled goat cheese

1 cup sliced strawberries

1 cup trimmed watercress

1/2 teaspoon extra-virgin olive oil

1/2 teaspoon fresh lemon juice

Dash of salt

Dash of freshly ground black pepper

1/4 cup (1 ounce) shaved fresh Parmigiano-Reggiano cheese

3 tablespoons shelled dry-roasted pistachios, chopped


Preheat oven to 425°.

Place crust on a baking sheet. Bake at 425° for 8 minutes. Remove from oven; arrange goat cheese evenly over crust.

Combine strawberries, watercress, olive oil, juice, salt, and black pepper; toss gently to coat. Arrange strawberry mixture evenly over goat cheese. Sprinkle pizza with Parmigiano-Reggiano and nuts. Cut into 12 wedges. Serve immediately.

The freshly frozen strawberries filling “Mom” at Tiny Green Mom’s freezer just cannot wait to dive into another recipe! This light, refreshing strawberry granita is sure to cool anyone off on a hot summer day! Thanks!

Fresh Strawberry Granita


1 pound fresh strawberries, rinsed and hulled
3 tablespoons granulated sugar
1/2 cup water
1 teaspoon lemon juice, optional
Traditional aged Balsamic Vinegar, optional
Mint leaves, for garnish


Wash, hull, and slice the strawberries. Place sliced strawberries in a large bowl. Toss the strawberries with the sugar; let stand for at least one hour at room temperature, or up to four hours. The strawberries will be very juicy. Puree the strawberries and their juices with the water in a blender. Taste and add fresh lemon juice, if desired. At this point, if you want, strain out any seeds.

Pour mixture into a 13×9-inch baking dish. Cover tightly with plastic wrap and freeze approximately 45 minutes or until icy at edge of pan.

Whisk to distribute frozen portions evenly. Cover and freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes.

Using a fork, scrape granita down length of pan, forming icy flakes. Return to freezer for at least 1 hour. Can be made 1 day ahead. When served, the granita should look like a fluffy pile of dry red crystals.

To serve, scoop flaked granita into tall goblets or parfait glasses. If the granita is too solid you can allow it to sit in the refrigerator for half an hour until you can scrape it with a fork. Garnish with mint leaves, and serve immediately with iced tea spoons.

For an extra-special taste sensation, drizzle the tops (use a dropper) of each serving of Strawberry Granita with aged balsamic vinegar.

  3. Electronic pool alarms can be installed around the pool to sound when someone walks by them.
  4. Place safety locks on all doors and slider doors at 5 feet or higher to ensure small children cannot open doors on their own.


  1. All parents should know CPR and basic first aid if you have a pool.
  2. At the age of 4, have children enrolled in basic swimming lessons to ensure they can stay afloat on their own.
  3. Practice pool safety tips with your children and remind them that the pool is not a place to horse around.

Strawberry season is here! There is nothing “Mom” at Tiny Green Mom loves more than juicy, ripe strawberries this time of year! After visiting the farmer’s market today and purchasing an entire box of strawberries, the quest for recipes began! What to do with all those delicious berries? How about Strawberry Muffins? Found on, a website dedicated to all things strawberry, these moist muffins are just heavenly!

Strawberry Muffins


2 eggs
2/3 cup sugar
1/2 cup milk (or milk substitute, if lactose-intolerance is present)
1/4 cup plain, fat-free organic yogurt
1 teaspoon vanilla
1/2 stick organic butter, melted and cooled
2 cups unbleached or whole-wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 1/2 cups strawberries, hulled and cut in chunks


Preheat oven to 375°F/200°C. Grease muffin tins or line with paper cups.

In a large mixing bowl, whisk together eggs and sugar until light. Add milk, yogurt, vanilla, and melted butter. Gently whisk.

In another bowl, combine flour, baking powder, salt, and cinnamon. Add to milk mixture and stir just until flour disappears. Gently stir in berries.

Spoon thick batter into muffin cups to the top. Bake about 25 minutes, until tester comes out clean. Invert and cool on rack.
