In honor of Cinco de Mayo, which is just around the corner, you may want to whip up some delicious Mexican Hot Chocolate to tantalize the taste buds. Ole!

Mexican Hot Chocolate


1 cup organic dark or semi-sweet chocolate chips or nibs

4 cups organic rice milk

1 teaspoon organic vanilla extract

1/2 teaspoon organic ground cinnamon


Melt the chocolate in double boiler, and in another saucepan, heat the milk on medium-low heat. Add the chocolate to the warm milk and whisk together briskly. Add in the cinnamon. Pour into mugs and enjoy! Can be topped with organic whipped cream and sprinkled with a dash of cinnamon. Makes 4 delightful servings.
