Here’s a recipe that has been a family favorite for years – Orange Delight! Traditionally made at the holidays and on special occasions such as birthdays and anniversaries, it now has made its’ weekly debut in “Mom’s” house as a Vitamin C packed pick-me-up! For variation, try adding in frozen pineapple chunks or frozen organic peaches.
Tiny Green Mom’s Orange Delight
1 cup Soymilk or Rice Milk
1 cup water
1 container organic orange juice concentrate
1/4 cup turbinado sugar
1 tsp. organic vanilla extract
12-15 ice cubes
Place soymilk, water, and orange juice concentrate in a blender. Add in the rest of the ingredients and blend until smooth and frothy. Add more ice if you desire a thicker consistency. Pour into tall glasses and garnish with an orange slice. Makes 4 servings.
