For a quick, easy salsa – all you need is a food processor and some fresh tortilla chips!
Tiny Green Mom’s Super Easy Salsa
Ingredients
1 can whole, peeled organic tomatoes (do NOT drain)
2 – 3 T. chopped fresh cilantro or more to taste
1/2 yellow or white onion, quartered
3 shallots (green onions), chopped
2 garlic cloves, peeled
1 jalapeno pepper, seeded (add 2 for a kick!)
juice of 1 lime
sea salt and black pepper, to taste
Preparation
Place all ingredients in a food processor, chop and mix until of desired consistency. Some like it chunky, some a little more smooth – it is up to you! Serve with warm, toasted tortilla chips or use as a topping on nachos, chicken breasts, tacos, burritos, etc.
