The variation of these yummy potato pancakes calls for sweet potatoes instead of white potatoes, which provide beta-carotene. YUM!

Indian Potato Pancakes


1 1/2 cups grated white or sweet potatoes, well packed

1 1/2 teaspoons garam masala or curry powder

1/2 teaspoon salt

1/4 cup finely chopped scallions

1 egg white, lightly beaten (use 2 egg whites if using sweet potatoes)


Combine the potatoes, garam masala or curry, salt, scallions, and egg white. Warm a large, nonstick skillet. Drop the potato batter by a scant 1/4 cup measure onto the skillet and gently flatten into a circle with a spatula. Make as many pancakes as will fit in your skillet, but leave enough room to flip them.

Cook on medium heat for about 5 minutes, or until browned. Flip the pancakes over, cover, and cook for 3 minutes on the second side. Then uncover and cook until browned, about 3 minutes.

The pancakes can be topped with mango chutney or nonfat yogurt. Enjoy!

1 mango, peeled and sliced

1 cup blueberries

2 bananas, peeled and cut in half

1 small whole fresh pineapple, peeled and cut into pieces

1 cup chopped kale

1 cup chopped spinach

2 cups water


Combine the mango, blueberries, bananas, pineapple, kale, spinach, and water in a food processor or blender. Process until smooth. Add a little more water if the consistency is too thick for you.

Pour the mixture into BPA-free ice-pop molds. Place the molds in the freezer. Serve the ice pops when frozen.

Gazpacho Margarita, Ole!


1 English cucumber, medium dice

1 red onion, medium dice

6 Roma tomatoes, medium dice

1 green bell pepper, medium dice

1 jalapeno, seeded, small dice

2 garlic cloves, minced

40 ounces tomato juice

1/4 cup extra gold tequila

1/3 cup fresh squeezed lime juice

1/4 cup extra virgin olive oil

Sea salt, to taste

Black pepper, to taste

2 limes, cut into wedges


Mix all the ingredients together, except for the salt, pepper, and lime wedges, and chill for several hours until icy cold. Lightly puree half of the soup in the blender, and then add the rest and puree both portions together. Season to taste with salt and pepper.

Serve cold with a lime wedge propped on the rim of each bowl of soup. Ole!

Ginger Pineapple Chicken Stir Fry with Snow Peas


1 pound of boneless skinless chicken breast

1 red bell pepper

1 cup fresh pineapple chunks

2 cups fresh snow peas

3/4 cup sliced shiitake mushrooms

1 red onion rough chopped

1 tablespoon chopped garlic

1 tablespoon minced fresh ginger

½ cup soy sauce

1 tablespoon sesame seeds


Spray non-stick frying pan with a non-fat cooking spray. add to pan sesame seeds, chopped garlic, and chikcen strips. saute for two minutes.

Add red pepper, onion, ginger, and mushrooms. continue to saute for 1 minute.

Add soy sauce, pineapple, red pepper flakes, and snow peas. cover and let cook for 1 minute.

Uncover and stir until chicken and vegetables are covered with sauce and chicken is fully cooked.
