You typically see soybeans (edamame) in Japanese restaurants, (those little snacks served in the pod). But you can also buy shelled soybeans in the freezer section of many grocery and health food stores. Keep a bag handy to make this quick dip for last minute guests, or as a light snack on nights when you’re too tired to cook. You can also use it as a sandwich spread (such as an open-faced grilled cheese sandwich) or serve it to your kids with a bowl of chips to sneak some veggies into their diets. No one will believe that this dip is made from soybeans–or that it’s full of fantastic nutrients.

Surprise Someone Soybean Dip

from The Love Diet


1 c steamed soybeans (edamame)

1/4 c fresh spinach leaves, roughly chopped

1/4 tsp garlic, (approx 1/2 clove), minced

1 tbsp lemon juice

2 tsp olive oil

1/2 c vegetable stock

1/2 tsp dry mustard

Salt and white pepper to taste


1. Put ingredients in a blender and purée until smooth.

2. Season with salt and pepper before serving.

3. Serve as a dip with vegetables, chips or thyme-sprinkled whole wheat pita chips (page 113), or use as a spread on sandwiches.

Dip can be kept, refrigerated, for up to 5 days.

Makes 4 servings.
