This easy, delicious soup is a healthy winter warmer and ideal for feeding a big family on a budget. Better than that, its exotic but subtle flavours are as at home on the dinner party table as they are on the kids table – so it’s an easy but impressive first course!
Israeli Couscous And Fresh Herb Soup
Ingredients
1 tbsp olive oil
1 small onion, finely chopped
5 cloves garlic, finely chopped
400g tin diced tomatoes
1 ½ litres of chicken stock (vegetable stock can be used to make a vegetarian dish)
100 g Israeli couscous
¼ bunch of coriander
Approx 25 mint leaves
Salt and black pepper to taste
Preparation
Heat olive oil in large, heavy base saucepan. Add onion and garlic and gently cook till fragrant.
Add tomatoes, stock and Israeli couscous. Bring to the boil, then reduce heat and simmer gently for 10 minutes or until couscous is tender.
Add coriander and mint and stir through, leaving to simmer for another 5 minutes.
Season with salt and pepper to taste, and serve hot with your favorite bread.
