Crusted Blue Cheese Filet Mignon


For Sauce

½ cup white onion, minced

3 cloves garlic, minced

1 tablespoon chopped thyme

¾ cup beef broth

½ cup port wine

For Filet

Four 6 oz. filet mignons

¾ cup crumbled blue cheese (or other crumbled gluten free cheese)

¼ cup ground Crunchmaster® Multigrain Crackers

1 tablespoon chopped basil

3 tablespoons olive oil, divided

In an 8 to 10 inch (medium) skillet, melt butter on medium heat. Add onion, garlic, and thyme. Sautee, stirring continuously, until onion is translucent and tender. Add beef broth and port wine. Continue cooking until sauce mixture is reduced by half. Set aside.

In a 12 inch (large) skillet, heat 2 tablespoons olive oil. Sear filets in pan on medium high heat until cooked to medium rare. Remove filets from the pan. In a small bowl, combine 1 tablespoon of olive oil, cheese, crumbled Crunchmaster® Multigrain Crackers, chopped basil, and melted butter.

Place filets on a baking sheet. Top each filet with the cheese mixture. Broil on low about 3-5 minutes. Serve with sauce.
