A warm, healthy start to the day begins with this dish from Traci Vujicich, of Healthy Eating by Design. This can be assembled the night before, and popped into the oven in the AM.
Good Morning Popeye
Ingredients
Baking potatoes
Onion
Red Bell Pepper
Carrots
Garlic
Oregano
Bouquet Garnis (or other dried herbs such as rosemary or sage as desired)
Garlic powder
Onion powder
Garlic
Salt and pepper
Fresh baby spinach leaves
Olive oil
Preparation
Please note: The amounts are not listed for the ingredients because it depends on how many people will be eating this. Adjust to your taste.
Wash the potatoes, peppers, and carrots. Peel the carrots. Slice everything to bite sized pieces and put in a bowl. Add in some crushed or chopped garlic into the bowl. Sprinkle in the herbs, salt, and pepper. Add in the spinach leaves and drizzle with olive oil. Mix everything together until all the vegetables are well coated with herbs and oil.
Put all of this into a sprayed/oiled baking pan, in a thin enough layer so that everything is in one layer. Cover with foil and bake at 350 for 30 minutes. Take the foil off, and bake another 15 minutes or so, until all vegetables are soft and browned.
Serve with ketchup and whole wheat toast.
**This is easy to prepare the night before (up until the baking step) so you can pop it in the oven while you’re getting ready in the morning, and can have a home cooked breakfast any day of the week!
