Apple Salad Pizza

Ingredients

Vegetable cooking spray

Basic pizza dough (whole wheat if available)

2 C thinly sliced spinach

2 C chopped, cored red apples

2 tbsp lemon juice

¼ C raisins

¼ C coarsely chopped walnuts

½ tsp curry powder (optional)

¼ C shredded fat-free Cheddar cheese

¼ C crumbled blue cheese

Preparation

Spray 12-inch pizza pan with cooking spray; spread dough on pan, making rim around edge.

Arrange spinach on dough. Sprinkle apples with lemon juice; toss apples with remaining ingredients and arrange on spinach.

Bake pizza about 435F for 15-20 minutes or until golden brown.
