Take a sail around the dinner table with these refreshing fruit boats – they make a lovely dessert or afternoon snack!

Johnny’s CoolJuice Fruit Boats


1 pear, peeled, halved and cored

1 peach, peeled, halved and pitted

1 ripe banana

1/2 cup fresh raspberries or strawberries

1 cup of CoolJuice (any flavor)

2 heads Belgian endive, cleaned and separated

4 ounces gorgonzola cheese

1/4 cup chopped toasted walnuts


Combine all fruits and juice in a blender or food processor until pureed. Add more banana if mixture is too thin. Arrange endive leaves on a large platter. Pour fruit mixture into each leaf. Sprinkle with cheese and walnuts.

Serves 10-20.
