Crunchy raisin bran and freshly chopped apples blend together beautifully in these simple & healthy breakfast muffins!
Apple Raisin Bran Muffins
Ingredients
1 cup Raisin Bran Cereal (“Mom” prefers Cascadian Farm Organic Raisin Bran)
1 cup milk (“Mom” prefers unsweetened almond milk)
1 cup vegetable oil
2 eggs slightly beaten
1 tsp vanilla
1 cup finely chopped apples
2 cups all purpose flour
1 cup SustaBowl
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp cinnamon
Preparation
Preheat oven to 350 degrees.
Spray regular size muffin pans with non-stick vegetable coating spray. Combine cereal, milk, oil, eggs, and vanilla into mixing bowl. Let stand 10 minutes then mix gently with electric mixer. In a separate bowl mix flour, baking soda, baking powder, cinnamon, and SustaBowl together. Gently fold into cereal batter and mix on medium speed until uniform. Add chopped apples.
Spoon batter into oiled muffins tins and bake for 15-18 minutes.
Makes 18 medium sized muffins.
