Summer is in full swing, and this refreshing salad is the perfect item to serve at an afternoon lunch or as a first course before dinner.

Bibb Salad with Perfectly Ripe Pears

In a mixing bowl, combine Bibb lettuce, arugula and pears (about 1/3 of a pear total per serving, cut into slices about the size of your thumb). Add lemon-vinaigrette dressing (recipe below) and season. Place the lettuces and pears on a plate, top with toasted almonds and smoked blue cheese. Serve and enjoy!

Lemon Vinaigrette Ingredients

1C Lemon juice

½ C Champagne vinegar

3T Dijon mustard

1 shallot, finely chopped

2 cloves garlic, chopped

5C Extra virgin olive oil

Salt and pepper

2 Lemons, zested


Place top ingredients in large blender or food processor and add two cups of the oil slowly while mixing. Then pour mixture into mixing bowl and whip in remaining oil. Season with salt and pepper. Add finely grated lemon zest to taste.
