Don’t waste anytime with this comfort food recipe. It’s fast to prepare and very filling!

Chicken Chile Stew – Crockpot Style


1 tbsp. vegetable oil
2 lbs boneless skinless chicken breasts, cut into 1/2 inch cubes
1 medium onion, finely chopped
2 garlic cloves, finely minced
1 (19 oz) can chopped tomatoes with juice
1 (15 oz) can corn kernels
1 (19 oz) can black beans, rinsed and drained or 2 cups cooked black beans
2 cups mild salsa or 2 cups hot salsa
1 tbsp. chili powder
1/2 tsp. salt


Heat oil in skillet over medium heat. Cook chicken until no longer pink. Using slotted spoon, remove chicken from pan, and transfer to crock pot. Add all remaining ingredients, and cook on Low for 4-6 hours, or High for 2-3 hours.
