Arancini Di Riso ~ Rice Balls


500 g rice

Saffron threads


1 to 1 ½ L Vegetable Broth* (as much as the rice takes)

Ham, cubed

Mozzarella, cubed

Salt & Pepper, to taste

Parmigiano Reggiano, grated

1 Egg






In a pan, fry the small chopped onion in butter until golden. Add in the rice andsaffron threads. Mix. Add in the vegetable broth one ladle-full at a time. Allow the broth to reduce before adding another ladle-full. Continue doing this until rice is al dente. Remove from heat. Add Parmigiano cheese and egg. Mix then allow rice tocool. After the rice is cool, addin ham, mozzarella, salt and pepper. Scoop into a ball. Lightly flour the rice ball, then dip into the egg and finally place in the breadcrumbs. Fry and serve.

*(To make your own vegetable broth, place vegetables—carrots, celery, onions, and any other vegetables of your choosing, in cold water. Bring to a boil. Reduce to half.)

Serves 6-8.

Filetto di Manzo All’Aceto Balsamico ~ Beef Fillet in Balsamic Vinegar


Beef Fillets, one per person

Flour, as needed

Extra Virgin Olive Oil, as needed

Butter, as needed

1⁄2 ladle Water

Balsamic Vinegar, to taste

Salt, to taste


Slice the meat thinly and beat with a meat beater to flatten, flour the meatand place in a pan with oil and butter and cook on both sides adding 1⁄2 ladle of water and at the end Balsamic Vinegar and salt. Let it cook until the sauce thickens into a delicious creamy consistency.

Gelato Alla Crema ~ Italian Creamy Ice Cream

700 mL Milk

240 g Sugar

1 Vanilla Bean

300 mL Heavy Cream

8 egg yolks


Blend eggs with sugar. In a pot, bring the milk, vanilla bean and heavy cream to a boil. Add in the egg-sugar mixture and cook on the stove on a very low flame. (Temperature of this mixture should not exceed 96 C or else the eggs will scramble). Place in ice cream machine.

Note: This is the basic recipe for“gelato”. The “flavor” of the ice cream is determined by what ingredient you add to the milk-cream mixture. For instance, vanilla bean, chocolate, coffee, tiramisu should all be added when you bring the milk and heavy cream toa boil in order to get that particular flavor.
