The preparation time on this lively pilaf is 10 minutes – perfect for busy families on weeknights now that school has begun! This dish makes great leftovers too, if there is any left after dinner!
Whole Grain Vegetable Harvest Pilaf
1/2 lemon zested and juiced
14 oz. garbanzo beans or chickpeas, drained
8 oz. tomato juice
2 oz. fresh baby spinach
1 package Uncle Ben’s® Ready Whole Grain Medley™ Vegetable Harvest
1. Combine tomato juice and rice, heat for 2 minutes over medium-high.
2. Add spinach, garbanzo beans and lemon juice. Continue cooking for 3 minutes.
3. Toss with lemon zest just before serving.
