People often associate summer with cucumbers, but in fact their peak season starts at the beginning of September. Toss this colorful dressing with leafy greens, serve it with crudités instead of ranch or even use in a cold pasta salad.

Cool Cucumber Dressing


1 medium cucumber, peeled and seeded
1 green onion
1/2 cup salad oil
1/4 cup Holland House White Wine Vinegar
2 Tbsp. minced ginger root
1 Tbsp. honey
Pinch salt


Cut cucumber and green onion in four pieces; place in blender container. Add remaining ingredients. Cover and run on high 1 minute.

Makes approximately 1-1/2 cups.
