Healthy Chocolate-Pumpkin Cookies
1 (18.25 ounce) package devil’s food or chocolate cake mix
1 (15-ounce) can unsweetened pumpkin puree
Optional: 2/3 cup miniature semisweet chocolate chips
PREHEAT OVEN TO 350º
MAKES 3 DOZEN COOKIES
COOKIE SHEETS, GREASED OR LINED WITH PARCHMENT PAPER
1. Mix the cake mix and pumpkin puree in a large bowl with a wooden spoon until blended (dough will be stiff). If desired, mix in the chocolate chips.
2. Drop the dough by tabespoonfuls, 2 inches apart, onto prepared cookie sheets.
3. Bake 8 to 11 minutes or until edges are firm and center is just barely set when lightly touched. Cool 1 minute on sheets, then remove cookies with spatula to wire racks to cool completely.
