Brown Family Turkey Dish
2 tablespoons olive oil
3 garlic cloves
1 pound ground turkey
¾ yellow onion, chopped
Chopped tomatoes or tomato paste (optional)
Kosher salt and freshly cracked black pepper
2 cups low-sodium chicken stock
1 (5-ounce) bag triple washed spinach
1 (15-ounce) can cannellini beans, drained
Seasonings – red pepper flakes, fennel seeds, thyme, Italian seasoning (all optional)
Brown rice or pasta, for serving
Heat the oil in a large skillet over medium-high heat, add the chopped onion until somewhat translucent and add garlic for 30 seconds. Turn the heat up to medium-high and add the ground turkey and, using a wooden spoon, break up the clumps and cook until golden brown, 4 to 5 minutes. Season with salt, pepper, and preferred seasoning. Add the stock (and tomatoes if using) and scrape up any bits on the bottom of the pan. Bring up to a boil, and then let simmer until slightly reduced, about 10 minutes. Stir in the spinach and cannellini beans and heat through. Season with salt and pepper.
Serve over brown rice or your favorite pasta, and add Parmesan cheese if desired.
