Cauliflower Mash (Faux Mashed Potatoes)
3 1/2 cups frozen cauliflower – 1-16 oz bag
3 oz Kitchen Basics unsalted chicken stock
3 1/2 tbsps Non-Fat Greek yogurt
salt and pepper to taste
1 tsp extra virgin olive oil – drizzle
Cook cauliflower with some of the broth in microwave for 8 to 10 minutes or until cooked but still a bit crunchy, not mushy. Put all ingredients, except extra virgin olive oil, into a blender or food processer and puree until the consistency of mashed potatoes drizzle with extra virgin olive oil and serve.
