Two cups of fresh mushrooms make this dish rich and flavorful, and the added orange extract, dill and cinnamon add distinct flavor.

Turkey Scaloppini with Mushrooms


2 tsp olive oil, divided

3 oz cooked turkey breast, sliced in strips

3/4 cup onion, finely chopped

2 tsp cider vinegar

1/8 tsp lemon herb seasoning

2 cups mushrooms, thinly sliced

1/2 cup unsweetened applesauce

2 tsp cornstarch

1 tsp orange extract

1/8 tsp dill

1/4 tsp cinnamon

1 cup water – lemon and lime flavored


Heat 1 teaspoon oil in medium nonstick sauté pan. Sauté turkey with onion, cider vinegar, and lemon herb seasoning. Sauté until turkey is cooked through. In second sauté pan heat remaining oil and sauté mushrooms for 3 to 5 minutes. Add remaining ingredients and sauté until liquid is thickened. (Mix cornstarch with a little water to dissolve it before adding to saucepan.) Spoon mushroom mixture onto serving plate and top with turkey.
