Choc Chip Zucchini BreadThis moist bread is chock full of goodies – a great way to sneak in vegetables and fruits! The chocolate chips make the bread extra special, but you can always omit them if you desire.

Tiny Green Mom’s Chocolate Chip, Zucchini, Apple & Banana Bread


2 cups unbleached white whole wheat flour
1/2 cup organic brown sugar
1-1/8 tsp baking soda
1/2 tsp salt
1 tsp organic vanilla extract
1 large cage-free egg, beaten
2 tbsp organic butter, melted
1 cup Apple & Banana Buddy Fruit (about 3 pouches)
1-1/2 cups shredded zucchini (not packed)
1/2 cup semi-sweet chocolate chips


Preheat oven to 350°.

Combine the dry ingredients in a large bowl and mix together.

In a separate bowl add the egg, vanilla extract, melted butter, Apple & Banana Buddy Fruit pouches and shredded zucchini. Add to the dry ingredients mixture and mix until combined. Add chocolate chips and stir to combine. Pour batter into a 9×5 inch loaf pan.

Bake at 350° for 30-35 minutes until a toothpick inserted in the center comes out clean. Depending on your oven temperature, cooking times may vary. Remove from oven and let cool.
