This is a bread pudding makeover! Heather Bell and Jenny Engel of Spork Foods have created a delicious Pistachio Chewy Bite Bread Pudding that will be sure to please even your pickiest house guest this season! So whip up some holiday cheer and fill your house with the sweet scent of a new twist to an old favorite.

Pistachio Chewy Bite Bread Pudding


2 cups unsweetened almond milk (“Mom” uses Orgain’s Organic Almond Protein Milk)
1/3 cup organic dark brown sugar
2 tablespoons ground flax seeds
2 tablespoons arrowroot powder
2 tablespoons whole wheat pastry flour
2 teaspoons vanilla extract
Zest of 1 lemon
1/4 teaspoon sea salt
2 tablespoons non-hydrogenated buttery spread
6 slices whole wheat or organic white bread
4-5 Setton Farms Pistachio Chewy Bites, roughly chopped
1/4 cup pistachio kernels, finely chopped or pulsed until fine


Pre-heat oven to 350°.

Add almond milk to a bowl. Add sugar, flax seeds, arrowroot powder, flour, vanilla extract, lemon zest, and sea salt. Whisk until slightly frothy. Set aside.

Spread each slice of bread with a small amount of buttery spread and slice each piece into 6 small triangles. Place in a greased 8 x 8 baking dish, crowded together. Pour liquid mixture over bread and gently press with a fork to help bread absorb liquid.

Gently fold in chopped Setton Farms Pistachio Chewy Bites. Top dish with pistachios.

Bake about 38-40 minutes, or until pudding is set and top is lightly browned.

Pumpkin & Parmesan Ravioli with Rolling Pin 1

Pumpkin Ravioli Recipe


For the pasta dough:
1 cup all-purpose flour
1 cup semolina
1 teaspoon salt
4 large eggs + 2 yolks (“Mom” prefers cage-free)

For the filling:
2 cups pumpkin puree (how to make your own)
1/2 cup parmesan cheese, freshly shredded
1 large egg (“Mom” prefers cage-free)
2 cloves garlic, finely grated or pressed
1 teaspoon salt
1/8 tsp cayenne pepper (optional)

For the sauce:
6 tablespoons (3 ounces) butter (“Mom” prefers organic)
2 tablespoon fresh sage, chopped
Juice of 1 lemon (about 3 tablespoons)


Make pasta dough:
1. Mix together flours and salt, then create a well in the center (either in a bowl or on a countertop). Add eggs to well, scramble with a fork, and gradually incorporate flour into eggs. Continue stirring in flour, adding water if necessary, until it is almost all together. Turn dough out onto a floured surface if using a bowl.
2. Knead dough for about 5 minutes or until dough is smooth. To knead, press dough with heel of hand, fold in half, rotate 90 degrees, then repeat. Dough should be somewhat tacky. Add flour to surface and/or dough if it is too sticky, and/or use a spray bottle to add more water if dough is too dry. When kneading is complete, wrap dough tightly in plastic wrap and set aside to rest for at least 30 minutes to one hour.

While dough rests, make filling:
1. Combine all filling ingredients. Set aside.

Roll dough:
1. Cut dough into quarters and cover 3 of the pieces to keep them from drying out while you roll.
2. If using a machine, start rolling dough with the widest setting and work thinner one setting at a time. Roll until you can see through the dough when held up to a light, usually the second thinnest setting. Fold in half (short end to short end) and roll again. Set rolled dough aside, covering with a clean kitchen towel or plastic wrap. Repeat with other pieces of dough.
3. If rolling by hand, flour a large cutting board or countertop. Use a pin (or a wine bottle in a pinch) to roll dough into an oblong piece. Dough should be thin enough to see the pattern on your countertops. Cover rolled dough and repeat with other pieces of dough.

Fill ravioli:
1. If using a ravioli rolling pin, such as the Fonde Ravioli Rolling Pin, lay one sheet of rolled dough on a surface sprinkled with flour or semolina. Spread half of the filling on the dough, leaving a 1-2 inch border on the sides and about 4 inches at the far end (where you’ll stop rolling). Lay another sheet of dough on top of the filling, gently pressing out as many air bubbles as possible. Line up rolling pin at one end, then firmly press and roll. Cut pockets apart with a fluted ravioli cutter, pizza cutter, or sharp knife. Place formed ravioli on an upside down baking sheet or flexible cutting board sprinkled with semolina (to prevent sticking). Repeat with other sheets and remaining filling.
2. If using a ravioli tray, cut rolled sheets down to slightly larger than the tray. Place one piece of dough on the tray. Gently press dough into indentions, then spoon filling into holes. Place another sheet of dough on top, gently pressing air bubbles as you lay it down. Roll a rolling pin across tray to seal pockets. Flip tray to turn dough out. Cut pockets apart with a fluted ravioli cutter, pizza cutter, or sharp knife. Place formed ravioli on an upside down baking sheet or flexible cutting board sprinkled with semolina (to prevent sticking). Repeat with other sheets and remaining filling.

Make sauce + cook ravioli:
1. Put a large pot of water on to boil.
2. Heat butter over medium to medium-low heat in a light colored pan (this helps you see when it browns). Butter will first foam, then it as the foam subsides, it will begin to brown and smell nutty. After it starts to brown, add chopped sage. Remove from heat and carefully add lemon juice (it will splatter). Set aside.
3. Generously salt boiling water, then cook ravioli in batches. Add ravioli to water, stirring to keep from sticking to bottom. Simmer for 3-5 minutes or until ravioli float to top and are tender. You can test the doneness by taking one out and cutting off the corner to taste.
4. As you remove ravioli from water with slotted spoon, add to pan with brown butter sauce and toss to coat.
5. Serve hot with additional shaved parmesan, if desired.

● Extra ravioli can be refrigerated for one day, or frozen for at least a month. To freeze, place ravioli in a single layer on a baking sheet covered with semolina or corn meal. Freeze for at least 1 hour, then move frozen ravioli to a freezer bag (remove as much air as possible to prevent freezer burn). Cook from frozen, increasing cook time by 1-2 minutes.
● Extra filling can be stored in the fridge in an airtight container for a few days.

What to do with the leftover turkey carcass from Thanksgiving? Make this delicious, rich soup with loads of fresh vegetables, Diestel Turkey and beans!

Hearty Turkey Minestrone Soup


1 Large Diestel turkey carcass
1 large onion, large chunks
3 carrots, large chunks
3 celery stalks and leaves, large chunks
3 bay leaves
3 cloves garlic

1 medium potato, cubed
3 medium carrots, sliced
1 medium onion, sliced
1 cup celery, chopped
1 cup cabbage, chopped
1 cup green beans, 1″ pieces
1-14.5 oz. can Italian-style stewed tomatoes
2 tsp. dried basil
1 cup squash (zucchini, crookneck, etc.)
1 cup pasta, such as fusilli or penne (“Mom” prefers organic)
1-15 oz. can Cannellini (white kidney beans, (rinsed and drained
Salt and pepper to taste
Grated Parmesan cheese (“Mom” prefers organic)


break up carcass and place in large pot. Add cold water to just cover, approximately 3 quarts. Add the next 5 ingredients and bring to boil. Reduce heat and, with lid ajar, simmer for 3 to 4 hours. Remove carcass from liquid. Strain broth and cool. Remove turkey from carcass. Degrease broth and discard bones and vegetables.

to broth, add first 8 ingredients and turkey meat. Bring to Boil and cook for 15 minutes. Add squash, pasta and beans. Boil until pasta is tender. Season with salt and pepper. Ladle into bowls and pass the cheese.

Driscoll’s Low Sugar Raspberry Pie


2 cups all-purpose flour
1/2 teaspoon fine salt
10 tablespoons unsalted butter, chilled and cut into small pieces (“Mom” prefers organic)
1/4 cup vegetable shortening
6 to 8 tablespoons ice water

3 packages (6 ounces each) Driscoll’s Raspberries (“Mom” chose their organic raspberries)
1/3 cup granular no-calorie sweetener (“Mom” uses Stevia in the Raw)
1/3 cup dark brown sugar
2 tablespoons lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla extract (“Mom” uses Nielsen Massey Organic Madagascar Bourbon Pure Vanilla Extract)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg, beaten


Place flour and salt in bowl of a food processor and pulse until combined. Add butter and shortening and pulse until mixture resembles coarse crumbs. Add water, one tablespoon at a time and pulse just until dough comes together (be careful not to over mix). Pat dough into a disk and wrap in plastic wrap. Chill at least 1 hour.

Roll out dough on a lightly floured surface to a large circle about 1/4-inch thick. Cut out 13-inch circle and gently transfer dough to a 9 1/2-inch pie plate. Fold under edge of dough and crimp to make a decorative crust. Place in freezer for 15 minutes. Cut remaining dough into various small cutouts.

Preheat oven to 400°F. Line pie shell with aluminum foil or parchment paper and fill with pie weights or dried beans. Bake 10 minutes, remove foil and weights and continue to bake about 10 minutes or until lightly golden.

Reduce oven temperature to 350°F . Place raspberries, Splenda, brown sugar, lemon juice, cornstarch, vanilla, cinnamon, nutmeg and salt in a medium bowl and stir until evenly combined. Spoon into prebaked crust. Brush crust with beaten egg and top with small cutouts. Brush cutouts with beaten egg.

Bake 40 to 45 minutes or until juices are bubbling and crust is golden brown. Let cool slightly before serving or chill completely.

This adorable “pear” of turkeys makes a wonderful activity for the kids to make (and eat!) on Thanksgiving Day! Easy to assemble, Mom or Dad will want to help little ones with cutting and paring, of course!

A “Pear” of Berry Turkeys


2 firm but ripe pears of any variety (“Mom” chose organic)
1 package (6 ounces each) Driscoll’s Raspberries, Blackberries, Blueberries (“Mom” chose their organic variety)
1 package (16 ounces) Driscoll’s Strawberries
1 small carrot


Gently wash and dry all of the above ingredients.

Gather the following tools: 24 short (approx. 6 inches long) bamboo skewers, several toothpicks, a paring knife, and a cutting board.

Thread berries onto skewers by starting with a blueberry (to anchor the end of the skewer), then adding raspberries and blackberries until all but the last inch of skewer is covered. You’ll need approximately 12 per bird, depending on the size of your pears.

Insert your berry skewers across the back of the pear in arcs to mimic a turkey’s tail feathers. As your pear gets waited down on the back, insert skewers at a lower angle to keep the pear standing upright. Once your tail feather skewers are inserted and your pears are steady, it’s time to work on the faces.

Using a paring knife, carve two cone-shaped beaks from the carrot (alternatively, you can use the very tips of two whole carrots). Depending on the firmness of your pears, you may be able to attach the “beaks” just by pressing them into the pears. Otherwise, break off a toothpick tip and use it to attach the carrot beak to the pear.

Use similar toothpick tips in order to attach two small blueberries for eyes. If trying to avoid the use of toothpicks for care-free consumption, use a plastic drinking straw to carve out holes that are large enough to implant the eyes and beak.

For the turkey’s waddle, slice a thin sliver of strawberry and place with the cut side against the pear, just below the beak. The natural moisture of the cut edge will be enough to hold the waddle in place.

For the feet, remove the calyx of a strawberry and slice berry in half lengthwise. Use the tip of your paring knife to cut away a few wedges from the thick edge to form claws. Place the strawberry “feet” up against the base of the pear, cut-side down.
