It’s New Year’s Eve, and what better time to try your hand at making delicious crab legs for dinner tonight? This recipe for Lime Chipotle-Roasted Alaska Snow Crab is a distinctly delicious take on traditional crab legs, sure to impress family members and friends alike!

Lime Chipotle-Roasted Alaska Snow Crab

Lime Chipotle Vinaigrette:

1 cup rice wine vinegar or white vinegar
Zest and juice from 5 limes (1/2 cup fresh lime juice)
1 Tablespoon minced garlic
1 Tablespoon cumin
1/2 cup honey or agave nectar
1-1/2 Tablespoons chipotle puree*
1 cup cilantro, chopped
2-1/2 cups canola or olive oil

4 pounds Alaska Snow Crab clusters, frozen
1 cup (packed) chopped cilantro

Vinaigrette: Combine all ingredients, except oil, in a blender or food processor. Blend until smooth and slowly drizzle in oil.

Crab: Rinse any ice glaze from frozen Alaska Snow Crab under cold water; pat dry with paper towels. Marinate crab in vinaigrette and chopped cilantro for 15 to 20 minutes, to allow flavor into shells.

Preheat oven to 400ºF. Place crab on sheet tray and roast for 10 minutes, turning and basting every 4 minutes or so. Serve with Chipotle Corn Puree or Cauliflower Puree and grilled/roasted vegetables. Skip the butter!

*Canned chipotle peppers in adobo sauce.

Serves 4.

Recipe by Alaska Chef Erik Slater: “Vinaigrettes are not just for salads, and there’s way more to crab than just putting a bib on and dipping some boiled legs into melted butter. Roasting crab brings out flavors from the shell that you just can’t get from the steamer or a pot of water. There is a ton of flavor in those crustaceous shells! This dish brings the deep tones of roasted Alaska Snow crab with a smoky tease of Latin America. Win-win, I say…”

Credit card bills, short days, plummeting temperatures and maybe even a few extra pounds from all those holiday celebrations and libations. According to a recent article on, “studies show as many as 25 percent of Americans suffer from low-grade to full-blown depression after the holidays.”[1]. And then there is Blue Monday – the third Monday in January, believed to be the most depressing day of the year.

The fact is: the sun is out a bit longer each day and people are starting to think about spring, warm weather and bathing suit season. January is the month to actually take advantage and get ready for a new year.

Crispy Green Apple

It’s also “National Staying Healthy Month,” so here are five simple things everyone can do to feel healthier and spring into 2016:

1. Walk, don’t run.

2. Baby steps – take the stairs.

3. Eat fruit – consider freeze-dried fruit snacks when fresh fruit is not available.

4. Stay hydrated – water is best, but try some of the new natural beverages.

5. Sit less – pace, stand, get a walking desk. Just don’t sit.

This New Year’s Eve, serve this crowd-pleaser – Delightfully Light Deviled Eggs! Overdoing treats and desserts around the holidays isn’t healthy, but nutritionists know their clients are human, and that everyone wants to celebrate the season which revolves around food. Thankfully, by incorporating healthy probiotics (or “good bacteria”) into your regular diet can help manage bloating, alleviate chronic gas, and support digestive health. Even when New Year’s Eve celebrations, holiday parties and family meals may put your stomach into overtime!

While the health benefits are clear, Blue Isle’s delicious flavor and delectable texture are the real factors making this new product the over-achieving cousin to traditional cream cheese. The spreads can be used as an alternative to cream cheese spread, a dip, in cooking, or just as an exotic “good for you” treat.

Delightfully Light Deviled Eggs

6 eggs (“Mom” prefers, cage-free, organic eggs)
1/4 cup Blue Isle’s Original Yogurt Spread
1 teaspoon white vinegar
1 teaspoon yellow mustard
1/8 teaspoon salt
Freshly ground black pepper
Smoked Spanish paprika, for garnish

Place eggs in a single layer in a saucepan and cover with enough water that there’s 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute. Crack eggshells and carefully peel under cool running water. Gently dry with paper towels.

Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add Blue Isle Original Yogurt Spread, vinegar, mustard, salt, and pepper, and mix well. Evenly disperse heaping teaspoons of the yolk mixture into the egg whites.

Sprinkle with paprika and serve.

Winter is here! As colder temperatures strip your skin of moisture, set aside the heavy face creams and re-hydrate with lightweight facial oil. “Mom” has long been a fan of the Mad Hippie line, and this rejuvenating facial oil did not disappoint! Mad Hippie’s Antioxidant Facial Oil is packed with 18 actives, including hydrating argan oil, sea buckthorn berry, pomegranate oil, camu camu berry, blueberry extract, goji berry, raspberry seed extract, and hemp seed extract. “Mom” was delighted that it only takes a few drops to hydrate and bring skin back to life! The lightweight oil is not greasy and has a refreshing scent, as well!

Benefits of Mad Hippie Antioxidant Facial Oil include:

Creams vs. oils: Most creams are water based – therefore they will not hold moisture as along as an oil can.
