Dried Cranberry Scones (Gluten Free)

Ingredients

2 Cups Domata Living Flour or other Gluten Free All Purpose Flour Mix
2 Tbl Granulated Sugar
Pinch Kosher Salt
1/2 Tsp Baking Soda
2 Tsps Baking Powder
1 tsp Xantham Gum
1 stick of unsalted butter, cubed (“Mom” prefers organic)
½ cup dried cranberries
1 Cup Buttermilk (“Mom” prefers organic)
1 Egg, Separated

Preparation

Combine flour, sugar, baking soda, baking powder, xantham gum and salt. Using a pastry cutter, cut butter in until the mixture has pea size granules in it. Add dried cranberries and toss to coat. Add egg yolk to buttermilk and pour into dry mixture. Using a fork combine until most of moisture has been absorbed. Continue kneading until just combined but do not over knead. Transfer to an un-greased baking sheet and flatten into a disc about 1/2 inch thick. Using a pizza wheel, cut into 8 pieces. Brush with egg white and sprinkle with approx. 1 Tbl sugar.

Place into a preheated 375 degree oven for approx. 20 minutes or until golden brown.

Yields: 8 Servings

Chilled Avocado Soup with Roasted Corn and Pico de Gallo Garnish

Ingredients

1 Tbs. vegetable oil
2 ears of corn, roasted on a grill and removed from cob or 1 cup corn, fresh or frozen and thawed

1 large tomato, halved with seeds removed
1 small white onion, finely chopped
1/4 cup chopped cilantro
2 tsp. seeded and chopped jalapeno pepper (to taste)
Juice from 2 limes
Salt to taste

3 ripe avocadoes, pitted and peeled
2/3 cup frozen peas
1 cup Redwood Hill Farms Plain Kefir
1/4 cup chopped cilantro
1 Tbs. chopped white onion
2 tsp. seeded and chopped jalapeno (to taste)
Juice of one lime
1/3 to 1/2 cup warm water or gluten-free chicken broth
Salt to taste

Preparation

1. To roast the corn on the stovetop, heat oil in a sauté pan over medium high heat. Add fresh or frozen and thawed corn kernels and cook 5 to 7 minutes, until the corn is golden and toasted. Set aside.

2. To make the pico de gallo, chop tomato in to very small pieces and mix with onion, cilantro and jalapeno pepper. Stir in lime juice and roasted corn; add salt to taste and set aside.

3. To make the soup, place avocados, peas, kefir, cilantro, onion, jalapeno and lime juice in a blender. Puree until smooth. Add warm water or chicken broth to thin out the soup. Add salt to taste.

4. Divide soup between four or six bowls and top with Roasted Corn and Pico de Gallo Garnish. Serve with your favorite hot sauce.

Cast your line for this weeknight-friendly, fast, gluten-free, and fun twist on tacos. The smoky yogurt sauce and tropical mango flavor take them from OK to oh, yeah!

Fish Tacos

Ingredients

6 (5-inch) corn tortillas
grapeseed or canola oil, as needed
1½ cups shredded cabbage or lettuce
¾ pound tilapia or catfish
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon paprika
grated zest of 1 lime
1 cup cubed mango (about 1 medium)
1 ripe avocado, cubed
⅓ cup chopped fresh cilantro
2 green onions, green and white parts, thinly sliced
juice of 1 lime, divided
½ cup plain yogurt, preferably Greek style (“Mom” prefers organic)
1 to 2 teaspoons finely chopped canned chipotle chile pepper in adobo sauce

Preparation

Heat the tortillas one at a time in a dry skillet over medium-high heat until soft and pliable, 15 to 20 seconds per side. Or, stack the tortillas and microwave on high power uncovered until warm and flexible, about 25 seconds. Brush both sides of the warm tortillas with oil. With the bottom of a glass, gently press the tortillas into 6 jumbo muffin cups. Don’t worry if some of the tortilla folds inward.

Preheat the oven to 375°F. Divide the cabbage or lettuce among the tortilla cups. Wash the fish with cold water and pat dry with a paper towel. Slice the fish into 1-inch cubes and place in a medium bowl. In a small bowl, stir together the cumin, salt, pepper, paprika, and lime zest. Sprinkle the spice mixture over the fish and toss to coat. Divide the fish among the tortilla cups and bake until the fish is cooked through, about 15 minutes.

In a small bowl, toss together the mango, avocado, cilantro, green onions, juice of ½ lime, and salt to taste. In a second small bowl, stir together the yogurt, chipotle chile, and the remaining lime juice. Serve the fish tacos topped with the mango salsa and a dollop of yogurt sauce.

Walnut Tea Loaf

Ingredients

Canola oil cooking spray
1/2 cup prepared Mélange du Cap Rooibos tea by Le Palais des Thés (see brewing note), at room temperature
1 1/4 cups gluten-free flour mix
3/4 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup unsweetened applesauce
1/4 cup canola oil
2 large eggs
1/4 cup sugar
1/3 cup firmly packed brown sugar
2 tsp grated orange zest
2/3 cup chopped walnuts

Preparation

Preheat the oven to 350 degrees F. Coat an 8-inch x 4-inch loaf pan with cooking spray and set aside.

In small bowl, whisk together the gluten-free and almond flours, baking powder, baking soda, and salt. In another bowl, combine the applesauce, oil, and tea. Set both bowls aside.

In a mixing bowl, beat the eggs with an electric mixer until well blended and airy, about one minute.

Add the white and brown sugars, beat together, then add wet ingredients. Add the dry ingredients and zest and mix just until they are combined with other ingredients; there will be many small lumps. Using rubber spatula, blend in most of the small lumps, taking care not to over-mix. Stir in the nuts. Scoop the batter into the prepared baking pan.

Bake for 45-55 minutes, or until a straw inserted into center of the loaf comes out clean. Cool in the pan on a wire rack for 15 minutes. Turn the loaf out of pan and cool completely.

This tea loaf is best served after wrapping in foil for 8-24 hours, which allows flavors to ripen and loaf to become more moist.

Makes 8 servings.
