Updating your baby’s nursery to a more timeless, neutral space for your little one, or looking for more classic pieces that could work for more than one child? We have compiled some tips on creating an eco-friendly, modern space that will grow with your child that won’t break the bank!

Choose materials carefully. For the walls, opt for a child safe, enviromentally-safe, no or low-VOC (volatile organic compounds) paint, such as Real Milk Paint. Paint is one of the top indoor air pollutants, and VOC’s are the toxins that off-gas into the air upon application. Most major paint manufacturers now make a no or low-VOC line of paint with a wide choice of colors, so when picking out paint, read labels carefully or ask a store associate for assistance.

We all know that the color in a space can greatly affect our mood… and our children’s mood! For young children, opt for a color scheme that promotes a healthy night’s sleep & a calm, nurturing atmosphere for play. A neutral color can help to stabilize and ground, while green is an ideal color for any space. Green is neither hot nor cool & symbolizes growth & new beginnings. Use yellow sparingly, or not at all, as yellow is the hardest color for your eye to break down.

In addition to paint, carpet is another major indoor air pollutant, so instead look for hardwood, bamboo, cork, rubber or tile options for bedroom flooring. Adding an area rug made from natural fibers adds the needed warmth you want in a bedroom, plus offers a sound deadening quality to help sound from bouncing off the floor & walls. News headlines let parents know that Mother Earth has some concerning problems. There’s depletion of the ozone layer, toxins such as metals or phthalates polluting our water, drought, overstuffed landfills and acid rain, to name a few.

We turned to Southern California’s Dr. Andrea Neal, a mom of two who has a Ph.D. in molecular genetics and lipid biochemistry. She also has a Ph.D. Swedish Agricultural University where she studied the effects of toxins on our soil. After going on an expedition for oceanographic explorer and environmentalist, Jean-Michel Cousteau, in which she explored 8,000 miles of pristine ocean; studying the devastating marine pollution, including the Great Pacific Garbage Patch off the coast of California and the aftermath of Japan’s Fukushima nuclear power meltdown, she founded Hope2o, a company that enables consumers to test their tap and filter water for harmful toxins.

Here are 5 simple solutions for protecting Planet Earth together with your kids:

1. Do your best with the resources you have. Neal suggests simple, healthy approaches to “going green” that work for you and your family. Her family does not drink from plastic (plastic constitutes approximately 90 percent of all trash floating on the ocean’s surface, a whopping 46,000 pieces of plastic per square mile. They eat local and organic when they can. And, she confesses, they have more reusable bags than anyone on the planet.

2. Support an environmental cause. Neal’s cause is anything that has to do with water. “I have been to the middle of the ocean and have seen our trash floating there,” she says. “This makes me a huge advocate for environmental solutions.” She supports many eco-conscious organizations, including Michel Cousteau’s Ocean Futures Society for which she is an advisor; Mission Blue, led by famed National Geographic Society Explorer in Residence Dr. Sylvia A. Earle; Blue Frontier Campaign, which inspired Neal’s Operation Water Legacy program (OWL), an initiative to chemically map the New Jersey water system; and Blue Marble Project, a program that links mental and physical health with a connection to water. She suggests finding a project that speaks to your heart.

3. Play outdoors! Nature is healthy for us both physically and mentally. Neal’s family enjoys hiking, camping as a family and they all play soccer. She and her husband surf, dive, and snorkel. “We don’t get in the water as much right now with a small baby, but I am very much looking forward to some board time with him,” she says. “As Jacque Yves Cousteau used to say, ‘you protect what you love.”

4. Develop critical thinking skills. Find accurate information and put your energy and time into real solutions to the specific problem that bothers you and real causes. “You can’t protect what you don’t understand,” says Neal, again paraphrasing Cousteau. “With so much information on the Web, it is hard to sort out what is real and what isn’t.” Share what you learn with your children and involve them with all of your decisions and efforts. Help them learn to easily articulate why your family makes eco-friendly choices.

5. Commit to your kids’ future. Neal says it is going to take a global effort to try to change the current path we are on. “I hope that my efforts help secure clean water and a clean environment for my children,” says Neal. “With the rate of population growth, our ability to support everyone with the resources we have is diminishing quickly.”

It’s November 1st already! This time of year brings with it a season of warm, tummy-filling delights created using root vegetables. Try your hand at making these delightful little puff pastry hors d’oeuvres for any upcoming get-together you may be throwing or attending!

Butternut Squash & Herb Tarts 2Butternut Squash, Chestnut and Herb Filled Puff Pastry Hors d’oeuvres

Ingredients

1 butternut squash, about 3 lbs. (you can also use kabocha)

2 Tbs. extra-virgin olive oil

1 jar or package peeled chestnuts (5-8 oz.)

Salt & freshly ground pepper

Sauce:

1/8 cup coarsely chopped fresh cilantro

1/8 cup coarsely chopped fresh parsley leaves

1 large garlic clove, minced

1/2 teaspoon paprika

1/2 teaspoon ground cumin

1/8 teaspoon cayenne, or to taste

Salt to taste

1-2 Tbs. fresh squeezed lemon juice

2 Tbs. extra-virgin olive oil

1 package frozen puff pastry (we suggest DuFour which is an all-butter puff)

1 egg, beaten with a tablespoon water

Make the filling:

Preheat oven to 350°F. Top and tail the squash, halve it crosswise, put each piece flat-side down on the cutting board, and peel with a knife. Remove the seeds, then cut it into 1/2-inch cubes. Place in a large bowl, toss with the 2 tablespoons olive oil and season lightly with salt & freshly ground pepper. Spread on a parchment-paper covered sheet pan. Roast 20 minutes, until the squash is tender and starting to brown. Add the chestnuts and roast an additional 2 minutes, just to warm them.

While the squash roasts, make the sauce by combining the ingredients in the food processor (start with the smaller amount of lemon juice, and half a teaspoon of salt; you can always add). Pulse to puree to a sauce consistency.

Toss the squash with the sauce, and allow to cool. If you’re making these hors d’oeuvres ahead, you can finish the pastry, fill the cases and freeze. Just remove from the freezer and reheat to serve.

For the puff pastry cases, raise the oven temperature to 375°F. The pastry sheet should be well-chilled so thaw it in the refrigerator, not at room temperature. Unfold the sheet, use a rolling pin to even it out and thin it slightly. Use two square cutters (try a three-inch and a 2 1/4 inch) to first cut the larger squares, then the smaller square inside each one. Once you get them all cut, refrigerate for 10 minutes. Once chilled again, brush the edge of the inner square with the beaten egg, and carefully fold the large square over it, so that the corner of the large square meets the edge of the small, doing this twice so that you have a high-sided case. Where the two sides cross, the corners will be a bit thicker. Brush the whole case with a little egg wash, refrigerate again for 10 minutes, then bake until lightly brown and puffed up. As you take them from the oven, squish the centers down to form the cup for the filling. Let cool, then heap in the squash mixture. Reheat before serving.

Yield: About 24 pieces
