Bread pudding is always an indulgence, and the addition of pumpkin takes this dessert to a whole new level! Yum!

Pumpkin Bread Pudding

Ingredients

3/4 loaf baguette, cubed (“Mom” prefers a whole wheat baguette)
1-1/4 cup pumpkin pie filling
3/4 cup NEW Seasonal Coffee-mate Sugar Free Pumpkin Spice
1-1/2 cup milk (“Mom” prefers organic low-fat milk)
3 large egg yolks (“Mom” prefers organic, cage-free eggs)
2 Tbsp. granulated sugar (“Mom” prefers organic sugar)
1 Tbsp. pumpkin pie spice

Preparation

Preheat the oven to 350 degrees F. Combine your leftover coffee creamer and milk in a small saucepan over medium heat and bring to a simmer. Scoop remaining pumpkin pie filling into a separate bowl and whisk in yolks, sugar and pumpkin pie spice. Slowly whisk in hot cream mixture until combined. Strain the custard into a clean bowl and set aside.

Take leftover bread loaf or dinner rolls and cut into cubes. Scatter bread cubes in a buttered 9 by 9-inch baking dish or pan. Pour the custard over the bread, pressing down on the bread to totally submerge it in the custard. Top with sprinkle of pumpkin pie spice. Let sit for about 15 minutes to allow the bread to soak in the custard.

Place the pan in the oven and bake about 50 to 60 minutes. Remove from the oven and cool for at least 30 minutes before serving.

Creamy and delicious, a Mango Lassi is a wonderful after school snack that the kids can make with a little help from Mom or Dad. This recipe, courtesy of Food Network chef Claire Robinson, is made with fresh mango and blended with thick, creamy yogurt for a healthy and filling treat that you can enjoy throughout the fall months.

Mango Lassi

Ingredients

1/2 cup Coffee-mate Low Fat Vanilla Natural Bliss

1 cup canned mango pulp or 2 ripe mangoes, seeded, peeled and cut into small chunks

1 cup plain yogurt (Claire likes to use fat-free Greek yogurt for added tang)

Very small pinch of salt, optional

1/8 teaspoon ground cardamom, optional

Preparation

In a blender, combine the Coffee-mate Natural Bliss with mango and yogurt, blend for 2 minutes. Add salt and cardamom to taste and blend until creamy and smooth, about 1 minute.

Pour into small serving glasses and chill in the refrigerator until cold, about 1 hour. Enjoy!

This tropical treat is perfect on a hot summer’s day – the fresh mango tastes so dreamy!

Fresh Mango, Coconut & Lime Ice Cream

Ingredients

1 pound (about 3 cups) fresh mango slices

3/4 cup refrigerated coconut milk

1/2 cup all natural Coffee-mate Natural Bliss Sweet Cream

1/2 cup granulated sugar

1 lime, juiced

Pinch sea salt

Preparation

Place mango, coconut milk, Coffee-mate, sugar, lime juice and sea salt in food processor container; cover. Process until smooth. Transfer to a container and refrigerate for at least 1 hour.

Spoon mixture into ice cream maker and freeze according to manufacturer’s directions. Serve immediately or transfer mixture to covered container and freeze to enjoy later.

“No Ice Cream Maker Needed” Berry Ice Cream

Ingredients

3 cups chopped mixed frozen berries and/or fruit

1/2 cup all natural Coffee-mate Natural Bliss Low-fat Vanilla

1/4 cup fat free milk

Preparation

Place berries, Coffee-mate and milk in food processor; cover. Pulse until smooth. Serve immediately or spoon into a freezer safe container, cover and freeze for later enjoyment.

Super Fruit Bliss Green Smoothie

Ingredients

1/3 cup acai berry juice
1/3 cup fresh blueberries
1/3 cup pomegranate juice
1/4 cup packed baby spinach
1/4 cup Coffee-mate Natural Bliss Sweet Cream
1 cup crushed ice

Preparation

Place acai juice, blueberries, pomegranate juice, spinach, Natural Bliss, sugar and ice in blender; cover. Blend until smooth.

Homemade Apple Pastry

Ingredients

2 medium apples, such as Granny Smith, Golden Delicious or McIntosh
1/4 cup water
1 Tbsp. pumpkin pie spice
1 Tbsp. cornstarch mixed with 1 tablespoon cold water
2/3 cup plus 2 Tbsp. Coffee-mate Natural Bliss Caramel
2 sheets puff pastry, thawed
1 cup powdered sugar

Preparation

PREHEAT oven to 425 degrees F.

PEEL, core and chop apples, you should have 2 cups. In a small saucepan over moderate heat combine apples and water. Place a piece of parchment paper over the apples, so they are touching and cook over moderately low heat until apples are soft, about 5 to 7 minutes. Reduce heat to low and stir in pumpkin pie spice and Natural Bliss until well combined. Over moderately low heat, stir in cornstarch mixture and bring just to a boil. Remove from heat and let cool to room temperature.

LAY 1 sheet of pastry on board and cut it into 4 equal squares. Place 2 Tbsp. of cooled apple mixture in the middle of the upper part of the dough and fold over the bottom part. Seal the edges with a bit of water and crimp with a fork. Arrange the pastries on a parchment lined baking sheet. Repeat with the other pastry sheet. Bake until golden brown, about 15 to 20 minutes. Remove the pastries from oven and transfer to a cooling rack. Let cool 15 minutes.

IN a small bowl, add the powdered sugar and whisk in 2 Tbsp. of Natural Bliss to make a thick icing consistency. Drizzle the icing over the pastries. Allow the icing to set for about 30 minutes. Enjoy at room temperature.
