Creamy Shrimp Creole


1 pound shrimp, peeled and cleaned

1/4 cup unbleached flour

1/3 cup organic olive oil or other high-quality cooking oil

1 cup hot water

1 8 oz. can organic tomato sauce

½ cup green onions, chopped

½ cup fresh parsley, chopped

¼ cup green bell peppers, chopped

¼ tsp. garlic powder

1/1/2 tsp. salt

½ tsp. fresh thyme, chopped

Dash of cayenne pepper

2 bay leaves

1 tsp fresh lemon juice

1 tsp Creole seasoning

¼ tsp. black pepper

2 cups brown or long grain rice, cooked according to directions


Thaw shrimp if frozen (cut large ones in half). Over medium heat, blend flour into oil and brown, stirring constantly. Add water gradually and cook until thick and smooth, stirring constantly. Add remaining ingredients except shrimp and rice, cook for 5 minutes. Add shrimp, cover and simmer for 20 minutes. Remove bay leaves. Serve over hot cooked rice.
