Cast your line for this weeknight-friendly, fast, gluten-free, and fun twist on tacos. The smoky yogurt sauce and tropical mango flavor take them from OK to oh, yeah!

Fish Tacos


6 (5-inch) corn tortillas
grapeseed or canola oil, as needed
1½ cups shredded cabbage or lettuce
¾ pound tilapia or catfish
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon paprika
grated zest of 1 lime
1 cup cubed mango (about 1 medium)
1 ripe avocado, cubed
⅓ cup chopped fresh cilantro
2 green onions, green and white parts, thinly sliced
juice of 1 lime, divided
½ cup plain yogurt, preferably Greek style (“Mom” prefers organic)
1 to 2 teaspoons finely chopped canned chipotle chile pepper in adobo sauce


Heat the tortillas one at a time in a dry skillet over medium-high heat until soft and pliable, 15 to 20 seconds per side. Or, stack the tortillas and microwave on high power uncovered until warm and flexible, about 25 seconds. Brush both sides of the warm tortillas with oil. With the bottom of a glass, gently press the tortillas into 6 jumbo muffin cups. Don’t worry if some of the tortilla folds inward.

Preheat the oven to 375°F. Divide the cabbage or lettuce among the tortilla cups. Wash the fish with cold water and pat dry with a paper towel. Slice the fish into 1-inch cubes and place in a medium bowl. In a small bowl, stir together the cumin, salt, pepper, paprika, and lime zest. Sprinkle the spice mixture over the fish and toss to coat. Divide the fish among the tortilla cups and bake until the fish is cooked through, about 15 minutes.

In a small bowl, toss together the mango, avocado, cilantro, green onions, juice of ½ lime, and salt to taste. In a second small bowl, stir together the yogurt, chipotle chile, and the remaining lime juice. Serve the fish tacos topped with the mango salsa and a dollop of yogurt sauce.

Walnut Tea Loaf


Canola oil cooking spray
1/2 cup prepared Mélange du Cap Rooibos tea by Le Palais des Thés (see brewing note), at room temperature
1 1/4 cups gluten-free flour mix
3/4 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup unsweetened applesauce
1/4 cup canola oil
2 large eggs
1/4 cup sugar
1/3 cup firmly packed brown sugar
2 tsp grated orange zest
2/3 cup chopped walnuts


Preheat the oven to 350 degrees F. Coat an 8-inch x 4-inch loaf pan with cooking spray and set aside.

In small bowl, whisk together the gluten-free and almond flours, baking powder, baking soda, and salt. In another bowl, combine the applesauce, oil, and tea. Set both bowls aside.

In a mixing bowl, beat the eggs with an electric mixer until well blended and airy, about one minute.

Add the white and brown sugars, beat together, then add wet ingredients. Add the dry ingredients and zest and mix just until they are combined with other ingredients; there will be many small lumps. Using rubber spatula, blend in most of the small lumps, taking care not to over-mix. Stir in the nuts. Scoop the batter into the prepared baking pan.

Bake for 45-55 minutes, or until a straw inserted into center of the loaf comes out clean. Cool in the pan on a wire rack for 15 minutes. Turn the loaf out of pan and cool completely.

This tea loaf is best served after wrapping in foil for 8-24 hours, which allows flavors to ripen and loaf to become more moist.

Celebrate American Heart Health Month with a deliciously easy recipe for Vegan Gluten-Free Chocolate Cake, courtesy of the Elm Cottage Bed & Breakfast!

Vegan Gluten-Free Chocolate Cake


1/2 cup raisins
3 cups brown rice flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
3 Tbsp cocoa
1/3 cup chopped walnuts
1/2 cup Canola oil
1-1/4 cups brown sugar
Egg replacer equivalent to two eggs
1/2 tsp vanilla
1-1/2 cups soy yogurt
1 Tbsp lemon juice


1. Soak raisins in hot water for 1/2 hour, then drain.
2. Mix together flour, baking powder, baking soda, cinnamon, cocoa, and walnuts.
3. In separate bowl cream oil, brown sugar, egg replacer, vanilla, soy yogurt and lemon juice.
4. Fold in dry ingredients and raisins. Mix thoroughly.
5. Pour into an oiled 9 inch cake pan and bake at 350 degrees F. for 40-45 minutes

Mary’s Gluten-Free Apple Crisp



5 Organic Granny Smith apples (should be very crisp and tart)
¼ cup sugar
½ tsp. cinnamon
1 small lemon


½ cup quinoa flakes
½ cup walnuts or almonds (chopped well)
½ cup Mary’s Gone Crackers Original Crumbs
½ cup sugar
2 tsp. cinnamon
½ cup* melted butter (or substitute with ghee coconut oil or other light tasting oil)

*enough fat to ensure all topping ingredients are coated but crumbly enough to sprinkle on top of the apples


1. Peel, core and slice the apples
2. Put apples, sugar, cinnamon and lemon juice in a large bowl, mix well and pour into an ungreased baking dish
3. Shake the pan to distribute the apples well
4. Combine all topping ingredients and mix well
5. Evenly distribute the topping on the apples and pat down
6. Bake at 350 degrees for about 45 minutes or until apples are tender and bubbly. If topping begins to brown too much, turn the heat down to 325 degrees and cover with foil.
