Warm up this winter with this simple and flavorful soup that blends curry with sweet potatoes and Granny Smith apples!

Curry Sweet Potato Soup

Serves 4

Ingredients

1 Granny Smith apple, peeled and chopped

1/2 cup celery, chopped

1/2 cup chopped onion

1 tablespoon olive oil

3-4 sweet potatoes, peeled and cubed

3 cups chicken broth (“Mom” prefers organic)

1 bay leaf

1/2 teaspoon curry powder

1/2 teaspoon salt

1/2 teaspoon pepper

Preparation

In a large pot, heat oil over medium heat. Add apple, celery and onion and saute until tender. Add remaining ingredients and bring to boil. Reduce heat and simmer for 30 min. or until potatoes are tender. Discard bay leaf. Use an immersion blender (or transfer to regular blender) and process soup until smooth. Taste for additional seasoning. Enjoy!
