This is a great simple and flexible recipe which can be made in one pan, for minimal clean up. Any ground poultry, such as chicken, can be substituted for the turkey, if you prefer. You can even use chopped rather than ground in a pinch. Any savory spices in your cupboard can be used for this dish as well.

Ground Turkey and Peppers

Ingredients

1 lb Ground Turkey
1 Red, Yelllow, or Orange Bell Pepper
1 Cup Chopped Sweet Yellow Onion
4 Green Onions
4 Tbsp Chopped Fresh Cilantro

Preparation

Heat 2 Tbs olive oil in a large pan on medium-high heat. Try to use one with a lip that is at least 1.5 inches deep. You can also use a large soup pot, as long as the diameter is at least 8 inches across. Add the chopped
onions and bell pepper and sauté for a few minutes until softened, but not clear.

Push the pepper and onions to one side of the pan and add enough olive oil to coat the empty half of the pan with a thin layer. Move the pan and position it so that the side with the vegetables is off the burner. Adjust the heat to medium-high and let the oil heat for a few seconds. If you are using an electric stove, factor in slightly more time to heat up. Add crumbled up pieces of the ground turkey (or chopped pieces of the poultry product of your choice). Stir in salt and black pepper to taste.

Let the meat sit for a few minutes without stirring to allow it to brown. This usually will take about 2-3 minutes. When the bottom side has started to turn a golden brown stir the meat, making sure the cooked side is up. Let sit again until it has begun to brown on the other side.

Season with garlic and your choice of other spices. Anything savory, such as rosemary, thyme, or marjoram will work well with this dish, or simply use a poultry seasoning mix. If you’s like a little kick, add chili powder to taste. Stir in your spices, combining the meat, onions, and bell peppers, and return the whole pan to the burner. Next, stir in the fresh cilantro and let it cook until just wilted, or about 30 seconds.

Serve alone or over rice or other whole grain.
