Yes – we know what you might be thinking! Kefir, in a quiche? Why, it actually tastes quite good and lends a creamy texture! We are loving this new discovery here at Tiny Green Mom, and decided to share our recipe. Yum!

For those sensitive to dairy, Redwood Hill Farm makes Goat Milk Kefir that is absolutely delicious!

Tiny Green Mom’s Zucchini, Bell Pepper and Kefir Quiche


2 Wholly Wholesome pie crusts

1 yellow bell pepper

2 zucchini

2 tsp. freshly chopped dill

10 cage-free, organic eggs

1 cup organic shredded cheddar cheese

1 cup Redwood Hill Farm Goat Milk Kefir

Freshly ground black pepper and salt, to taste


Preheat oven to 400 degrees F.

Unwrap pie shells, place on baking sheet, and poke tiny holes with a fork in crusts. Bake for 15 minutes, or until the crusts begin to brown.

While crusts are baking, dice and chop the chosen vegetables, set aside. In separate bowl, break the eggs, and add the cheese and kefir. Stir and set aside.

Once crusts are ready, take them out of the oven. Place half of the vegetable mixture in the bottom of each crust, and pour 1/2 of the egg, cheese and kefir mixture over the top of each quiche. Sprinkle salt, pepper, and a pinch more fresh sill on the top of each one, if desired.

Turn oven to 350 degrees F, and place the quiches in the oven once more. Bake for 40-45 more minutes. Remove from oven, place on cooling racks, and let sit for 15 minutes before serving. Enjoy!

We are big fans of Wholly Wholesome at Tiny Green Mom, and this traditional pecan pie can be made with a spelt or gluten-free crust this season, so everyone can enjoy it!

Aunt Bonnie’s Pecan Pie


1/2 Cup Sugar (“Mom” prefers organic sugar or Stevia in the Raw)
1 Cup Corn Syrup
4 Tablespoons Butter (“Mom” prefers organic)
3 Eggs, beaten lightly (“Mom” prefers organic, cage-free eggs)
1 teaspoon pure vanilla extract
1 pinch salt
1 9-inch Wholly Wholesome Pie Shell (White, Whole Wheat, Spelt, Gluten Free)
2 Cups broken pecans (broken into small pieces)
60 whole pecan halves for the topping


Combine sugar and syrup in a fry pan over a medium heat for 5 minutes
Melt butter into mixture
Set aside to cool (if you’re in a rush, put the pan on a bed of ice in the sink)
Preheat oven to 400 deg F.
Once cooled, add eggs, salt and vanilla
Fill pie shell w/broken pecans
Pour syrup mixture over pecans until it’s just below the rim
Arrange pecan halves on top starting with the largest pecans around the outside in a circle and using progressively smaller pecan halves as you circles move towards the center. Be sure to save some nice small ones for the center.
Place on a piece of foil on top of a cookie sheet and place in the oven
Reduce oven to 350 deg F. and bake for 50 minutes or until pecans are nicely toasted, but not burnt.

Quiche – it never gets old around “Mom’s” house! This light and fresh recipe courtesy of Wholly Wholesome is especially tasty with the addition of feta cheese! Ready in 45 minutes – it also freezes well if you want to make a double recipe!

Vegetable Feta Quiche


1 Wholly Wholesome Organic Pie Shell

1 Cup Diced Onion (1 medium onion)

5oz Package of Wegmans Organic Baby Spinach

1 Red Bell Pepper, diced

1 1/4 Cup (6oz) of Organic Feta Cheese, crumbled

4 Wegmans Organic Eggs

1 Cup Organic Half & Half (“Mom” uses Silk Soymilk Plain Creamer)

1/4 Teaspoon Salt

Black Pepper to taste


Pre-heat oven to 375°.

Thaw pie crust and keep in the refrigerator.

Heat a frying pan with a tablespoon of vegetable oil. Cook diced onion on med-high heat 2 minutes, add diced red pepper, cook about 1 minute more until vegetable are soft. Remove from pan.

Add spinach to the hot pan and cook until wilted. Set aside to cool.

In a medium bowl, whisk together the eggs, salt, and half & half.

In the pie shell spread out the vegetables and crumbled cheese. Sprinkle with pepper.

Place pie shell on baking sheet and pour egg mixture over the other ingredients.

Bake until filling is set, about 45 minutes.

Shredded Cheese, any variety

Fresh Sliced Tomatoes


Cut pocket bread in half and open pocket. Stuff shredded cheese in pocket along with the tomatoes. Place sandwich on a panini press or in a toaster oven for 7 minutes or until cheese is melted. Enjoy!
